  1. Sift flour, baking powder and salt together in a large mixing bowl and keep aside.
  2. Add granulated sugar and oil in another mixing bowl and whisk till sugar gets dissolved completely.
  3. Now add eggs, one at a time and whisk till light and fluffy.
  4. Add cinnamon powder, vanilla extract and mix again.
  5. Take the dry flour mix and start adding it in the wet mix slowly and fold to make a smooth batter.
  6. Add a cup full of grated carrot and give a nice mix till everything incorporates well.
  7. Pre heat the oven at 180 degree C for 10 mins. and meanwhile grease or line a 8″inch baking pan.
  8. Pour in the batter in the pan and tap gently to break air bubbles.
  9. Place the cake tin in the middle rack of the oven and bake for 30-35 mins or till the tooth pick inserted comes out clean.
  10. Transfer the cake tin on a wire rack till completely cool.
  11. Frost it with some cream cheese or any of your favorite icing and decorate it accordingly.
Recipe Notes
  1. Collect all the ingredients on your counter before starting anything.
  2. Make sure all the ingredients should be at room temp.
  3. Temperature may vary as different ovens have different set up and control.
  4. Frosting and garnishing is person based.
