Sift flour and baking powder together and keep aside.
Blend sugar and butter till light and fluffy.
Add beaten egg into it and blend again. Keep 1tsp beaten egg separate to glaze the cake before baking.
Add almond extract and give a quick stir once again.
Now mix the dry ingredients with the wet ingredients with a silicone spatula.
Grease and line a 9 inch baking pan. Try to use a spring foam pan or line a parchment paper in the base to lift the cake after baking.
Spread the cake mix all over the pan and tap it with your palm or spatula to even it from all sides.
With a sharp knife make cris cross diamond patterns and brush the left over neaten agg all over to give that shiny texture.
Bake the cake in the pre heated oven at 180 degree C for 20-25 mins, till the cake turns golden in color, or the tooth pick comes out clean from the center.
Let in cool on a wire rack in room temperature and later cut into pieces and serve with tea or coffee.
