Vegetable And Cheese Croquettes

A croquette is a small bread crumbed fried food roll containing, usually as main ingredients, mashed potatoes and/or ground meat, shellfish, fish, cheese or vegetables.


 The croquette is usually shaped into a cylinder, disk, ball or oval shape, and then deep-fried. The croquette (from the French croquer, “to crunch”) gained worldwide popularity, both as a delicacy and as a fast food.

Perfect snack option for fussy kids and fussy adults too…lol

I am so addicted to croquette that sometimes i just couldn’t resist myself having few while frying the the batches. The cheese volcano eruption that takes place inside the mouth is beyond imagination. A good croquette provides a crunch along with an explosion of flavors that certainly makes one addicted to it.

Instructions
  1. Heat 1 tbsp of oil in a wok and saute onion and french beans for a minute.
  2. Now add grated cauliflower, carrots, peas and corns and continue to saute till the vegetables are slightly softened.
  3. Transfer the vegetables in a large bowl, add chilli flakes and mix well.
  4. Now add that boiled and mashed potatoes in the vegetable mixture and adjust salt.
  5. Add half the bread crumbs and mix well.
  6. Meanwhile spread the remaining bread crumbs on a plate and keep aside.
  7. In another separate bowl, add cornflour and lil water to make a flowing solution.
  8. Now divide the potato and veg mixture into 10 equal portions and shape them into croquettes.
  9. Create an indentation in between the croquette and place the mozzarella stick. Close up the edges and roll to enclose the cheese completely.
  10. Repeat the same procedure for making rest of the croquettes.
  11. Now heat oil in a deep wok.
  12. Take each croquette and dip into the cornflour solution, roll over the bread crumbs and deep fry till they turn golden in color.
  13. Repeat the same for rest of the batches. Place the fried croquettes on a paper napkin to drain out excess oil.
  14. Serve hot with your favorite dip or simple tomato ketchup!!!
