Veg Mango Flavored Kothey

Veg Mango Kothey is an Indo-Chinese snack that is made with various vegetable fritters tossed with sauces. Veg Mango Kothey is my version of creating a new recipe that is crispy, saucy and gives you an amazing fruity punch. The fruity flavor is acquired by Mango drink. You can use any bottled mango drink like frooti/ slice/ paperboat etc available in store near by to you. The recipe can also be made by using orange drink or juice if you prefer to have a orangish flavor.

Vegetables like, cabbage, capsicum, carrots, potato, onion and cauliflower coated with plain flour and cornflour to give a crispy texture is deep fried to make fritters and later sauteed in a saucy gravy made with mango drink, gives a sweet sour taste to the snack and is very appetizing. Usually kothey is cut, fried vegetables, but you can grate the veggies and make small balls like manchurian and deep fy them and later teem them with sauces.

Instructions
  1. Collect all the vegetables except onions in a bowl. Reserve some carrots and capsicum for later use.
  2. Add salt, pepper powder, cornflour and all purpose flour and dry mix the veggies with a fork such that the flour mix coats well on them.
  3. If you have grated the cabbage, then collect the cabbage and flour mix in a separate bowl and shape int small balls (just like machurian).
  4. Heat oil in a wok for deep frying and fry the cabbage balls as well as the coated carrots, cauliflower and potatoes till crisp and golden.
  5. Transfer the fried veg fritters on a kitchen towel to absorb excess oil.
  6. In a separate wok heat 2 tbsp oil and add choped ginger and garlic and saute till golden.
  7. Now add onions and some diced capsicum and sliced carrots. Saute them all till they are semi soft.
  8. Add little salt, green chili sauce, tomato sauce, soy sauce and mango drink and let the sauce cook till it starts to thicken.
  9. Now add the fried vegetable fritters in the thick sauce and along with some slit green chilies and mix well. The vegetable may get slight yellowish in color due to use of mango drink.
  10. Fry them all for another 2-3 mins and turn off the gas.
  11. Garnish it with finely chopped coriander or spring onion greens and serve hot on a lettuce or a cabbage bed.
