Sugar Cookies – Diwali Diya

I am always attracted towards creative things, no matter it’s art and craft or food. Since it’s Diwali time and i see sweets and savories everywhere … my mind got just stuck into making something that is a quick snack, looks pretty and gorgeous and also reflects my creativity. Luckily my son came up asking for some nice snacks for his friends in school as they were celebrating diwali in school before vacations. After a long research i finally found some amazing sugar cookie recipe by Neha Mathur.


These cookies were exactly what i made few days back for Halloween. The only difference and must say the beautiful difference was that the cookies were Diya shaped and filed with some amazing colorful royal icing. The icing was glossy that made the diya cookies look even more beautiful and festive. Instructions
For making cookies :
  1. In a large bowl, sift flour, salt and baking soda and keep aside.
  2. In another bowl whisk butter and sugar till soft and light.
  3. Now add egg and vanilla extract and whisk again.
  4. Add flour mix to the wet ingredients and mix all together and knead well to shape a smooth dough.
  5. Divide the dough two portions and cling wrap it and refrigerate it for almost 2-3 hours before use.
  6. Pre heat the oven at 180 degree C for 10-12 mins and line a baking tray with parchment paper.
  7. Take the dough and give a quick knead again on a floored counter. Roll it with a rolling pic into a 1/8 inch thick disk.
  8. Cut the disk into diya shapes using cookie cutter or hand made stencil.
  9. Place the cookies on a plate and refrigerate them for another 10 mins before baking.
  10. Line the cookies on the baking tray now and bake them for 10-12 mins or till they are lightly browned.
  11. Rest them on a wire rack and allow them to cool at room temperature completely.
For making the royal icing :
  1. 1. Whisk egg white and lemon juice in a bowl for 1 min.
  2. 2. Sift sugar and add into the egg mixture and whisk for another 2-3 mins.
  3. Divide into small portions and add different colors to them to make colorful icings.
  4. If you find the icing too thick you can add water drop by drop and whisk it well.
  5. Fill the colored icings into different piping bags and pipe them on the cookies making designs as per your imagination and creativity.
  6. The icing dries up quick so keep the rest of the icing covered.
