Spicy Mango Pan Seared Chicken

My recent client really allowed me to explore and stretch my cooking skills. I always love developing recipes, and when it’s a fusion, my imaginations go wild free. During the years i have developed various fusion recipes but today my creation has definitely gone to another level. I mean who could have ever thought of making a sauce with bottled mango drink and using it to pan sear a chicken! Yes, this is spicy, sweet, tangy and a roller coaster of flavors in one single dish. Spicy Mango Pan Seared Chicken is one such fusion recipe, which i loved making and above all it was super quick and damm delicious.

Mango drink reduced with some pureed mango and spiced with red chili and later pan seared with chicken gives a sweet as well as a spicy taste to the dish. The best addition to the recipe was mango pieces that not just added volume to the dish but also provided texture to the sauce . Let us quickly proceed to check out the recipe.

Instructions
Maaza Sauce :
  1. Heat 1/2 tbsp butter in a pan and add mango drink. Cook till the juice starts to thicken.
  2. Add red chili powder, salt and mango puree to the reduced mango juice.
  3. Cook for another few minutes till the sauce gets thick. Set aside.
  4. In another non stick pan, add butter and shallow fry the chicken from all sides till golden.
  5. Now add the mango sauce over the chicken and mix well. Pan sear it for 5-6 mins or till the chicken is cooked.
  6. Add chili flakes and some ripe mango pieces and give a quick mix.
  7. Now add fresh chopped coriander and turn off the gas.
  8. Serve hot as a side dish.
