Spaghetti With Stir Fried Carrots N Orange Juice

by Shaheen Ali

Nothing says Italy like its food, and nothing says Italian food like pasta. Wherever Italians immigrated they have brought their pasta along,  so much so today it can be considered a staple of international cuisine. Unlike other ubiquitous Italian products like pizza and tomato sauce, which have a fairly recent history, pasta may have a much older pedigree, going back hundreds -if not thousands- of years.

Spaghetti is an Italian word that literally means “little twines.” Spaghetti is a very popular form of Italian pasta. Spaghetti, then, is pasta that is shaped into long, thin, round strands—that look kind of like little twines. In some ways the word “spaghetti” has come to transcend its Italian roots, and be used today to refer to any kind of noodle that is long, thin and round. A noodle is simply shaped dough made from any kind of flour and water, that is then cooked in a pot of boiling water. If that sounds a lot like the definition given above for pasta, that’s because it is. But the difference is that pasta is made with semolina flour. Noodles, on the other hand, are made from any kind of flour at all—including soft wheat, rice, millet, barley, buckwheat, soy, corn, potato, and even bean starch.

It was a lazy winter afternoon, thought to have some pasta different from what i usually make. Spaghetti was my choice. Didn’t wanted to add those regular spices. Picked few red carrots , handful of sweet corns and what else did i want ? Turned around and saw a lonely orange looking  n calling me from my pantry. Yes, that’s it! this was exactly what i was looking for… The pasta turned out awesome and totally scrumptious. The sweetness of the carrots n corn with a tinch of orange juice n chunks was certainly an explosion of flavors.

Alas! my taste buds are happy n satisfied, though they got a fruity punch today…but who cares unless until my tummy is happy n gay !!!

Enjoyed my lunch with spaghetti and a hot cup of sweet corn soup. Life is awesummmmm!

Instructions
  1. Boil water in a large vessel and put spaghetti in it. Add 1-2 drop of oil while boiling.
  2. Once the spaghetti is boiled properly drain the water and wash the spaghetti with cold water. This will prevent the pasta sticking to each other.
  3. Meanwhile dice the carrots into medium size, take out the orange juice and cut the orange into small pieces. I used half an orange for juice and half for cutting into small chunks.
  4. Heat oil in a wok and add the diced carrots and stir fry them.
  5. Now add the sweet corns as well along with white pepper, oregano and chilli flakes. Give them all a toss.
  6. Now add the spaghetti with stir fry carrots and sweet corns and mix well. Adjust the salt as required.
  7. Now add 4 tbsp of orange juice in the pasta and mix all nicely.
  8. 8. Turn off the flames and garnish it with orange chunks.
  9. Serve Hot!!!
