Simple and delicious, Mutton Banjara is very famous in Rajasthani households.
The easiest Mutton Curry made with simple ingredients along with a simple recipe. No marination, no slow cooking, this recipe is apt for all who are in a rush to complete their dinner preparations. As the name says, Mutton Banjara, where Banjara means Gypsies. Hence the dish that is made in jiffy with the simplest ingredients in Mutton Banjara.
Serve Rajasthani Mutton Banjara along with Roomali Roti, Phulkas or Steamed rice for a weekend dinner.
Though the recipe is simple and easy to make but it is not at all advisable to those who are in a process of weight loss or are calorie watchers. The dish is a bit spicy and also requires a generous amount of oil.ghee for cooking. But still you can any day adjust the quantity of oil used but again that won’t give the ‘rogan’ (color and surface oil) as required. I usually make this dish on weekends and serve it with plain steamed rice and some raita to go along. But personally i would suggest to have this Rajasthani Bnajara Mutton with Roomali Roti.

- 750 grams mutton cut into medium pieces
- 1 cup cooking oil
- 3/4 cup Onion Paste
- 1 tbsp Garlic Paste
- 1 tbsp Ginger Paste
- 2 tbsp Red Chili Powder
- 2 tbsp Coriander Powder
- 1 tsp Turmeric Powder
- 4-5 tbsp yogurt
- 1 tsp Coriander Seeds roasted and crushed
- salt to taste
- 2 bay leaves
- 4 Cloves
- 4 Black Pepper Corns
- 4-5 Dry red chilies broken
- 1/2 inch Cinnamon Stick

- To begin making the Rajasthani Mutton Banjara recipe, heat oil in a non stick wok and add bay leaf, pepper, cloves, cinnamon and dry red chilies and sauté for a minute.
- Add onion paste and fry till raw smell goes off.
- Now add ginger garlic paste and fry it till its golden in color and leaves a nice aroma.
- Add mutton along with curd and mix well. Cook on high till curd water evaporates.
- Now add coriander powder, red chili powder, turmeric and mix well. Fry on low heat till oil starts leaving from sides.
- Add warm water as per requirement and adjust salt to taste.
- Mix well and pressure cook the mutton till soft. Carefully remove the lid and add crushed coriander seeds all over and give a gentle mix.
- Serve Rajasthani Mutton Banjara along with Roomali Roti, Phulkas or Steamed rice for a weekend dinner.

How many times do we have to whistle n pressure cooker
Hi, it depends on the mutton you are using, i would advise you to wait for 3 whistles first, open and check. If you still find it stiff and hard then i’m sure you yourself will get an idea as in how many whistles it may need to cook properly. Sometimes you have to decide it all by your own.
