Pyaaz Bhajiya – Crispy Onion Fritters

It’s a cloudy day today, and when we expect rains to come all we want is some a hot cup of tea with some crispy onion bhajiyas. Nothing can be as blissful as enjoying rains with this amazing combo of tea and snack. I don’t know who invented bhajiyas but one thing i know is that its one of the most loved monsoon snack by Indians specially when we have some tea to get along….. bliss!

Finely sliced onion, pretty much in quantity in ratio with the flour batter is flavored with Indian spices and deep fried til they are golden and crisp. This crunchy snack has various versions and names at different corners of our country. Easy to make and perfect snack option if you have sudden guests at home. These crisp pyas bhajiya tastes even more amazing if served with coriander and mint chutney. This is one desi chutney i can have with almost everything.

Instructions
  1. Heat oil in a wok and mean while prepare the batter for bhajiyas.
  2. In a large mixing bowl, add besan along with salt, cooking soda, red chili powder, garam masala powder and dry mix all.
  3. Slowly add water and stir to make a thick flowing batter. Avoid forming lumps.
  4. Now add finely sliced onions and chopped coriander & green chilies. Mix everything nicely and keep aside. [Adjust salt as per taste]
  5. Check if the oil is hot or not by adding a small drop of batter into it. If the oil is hot, the batter will immediately rise up and fry.
  6. Now turn the gas flames on medium heat and drop spoonful of bhajiya mix into the oil.
  7. Fry them in batches and once the bhajiyas are golden and nicely crisp, transfer them on a kitchen towel to absorb excess oil.
  8. Serve hot !!!
Green Chutney :
  1. Collect all the ingredients in a mixer grinder jar, except salt and lemon juice.
  2. Grind to make a smooth and thick chutney.
  3. Collect the chutney in a bowl and add salt as per taste.
  4. Now add lemon juice and mix well.
  5. Serve with hot bhajiyas or pakoras.
