Plum & Dates Cake

During Ramadan the house was flooded with Dates and Plums. After having tried lots of smoothies, chutneys, dips etc…this time i wanted to bake a cake using these fruity goodness.I have always been fascinated by the Plum cake made during Christmas, the gooey texture and the fruity aroma is simply divine and heavenly. So how about adding dates and plums together in a cake …. ???

Baked this heavenly dessert. It took me around 35 mins to get a perfectly baked loaf. Though the cake can be made in any regular baking pan but i preferred making a loaf. The baking process was fun and within no time the house was filled with an exotic aroma of dates and plums. As i wanted that gooeyness in the texture i choose to keep few chunks of dates in the batter so that it can give a bite and one can enjoy the flavour in every slice.

Instructions
  1. Remove seeds from dates and plums and keep aside. If you are using dry dates then it is advised to soak them over night before use. But the fresh dates can be used directly.
  2. Sift the flour and baking powder together in a large bowl and set aside.
  3. In a separate bowl add sugar and butter and blend together till it the sugar dissolves and the it becomes light and creamy.
  4. Now add eggs one by one and keep blending till it becomes fluffy.
  5. Add vanilla essence and mix again. Keep aside.
  6. In a blender jar, add dates and plum together and blend it to make a thick paste. If you like dates and plum pieces in the cake then blend it lightly. Else you can turn it into a fine paste.
  7. Now add the ready paste into the sugar, butter and egg solution. Blend it again. You can either use a hand blender or and electric one.
  8. Add the dry ingredients into the wet ingredients and fold them to make a smooth batter with the help of a silicone spatula. If you find the batter to be too thick, you can add 1 or 2 tbsp of milk to smoothen it.
  9. Grease and dust a 6 inch baking loaf pan and pour the batter into it. Tap the bottom of the pan to settle the batter evenly.
  10. Garnish with handful of sliced almonds and raisins. Bake the loaf in a pre heated oven at 180 degree C for 30-40 mins or till the inserted tooth pick comes out clean.
  11. Cool the loaf on a wire rack till room temperature. De mold it and cut into slices and enjoy.
