Nolen Gur Sondesh | Instant Bengali Sondesh

I’m a huge fan of Nolen Gur, that is Date Jaggery and i very keenly wit for the winters to stock up my yearly jaggery requirement so that i could enjoy the delicacies when ever i want. I have uploaded many recipe made with Nolen Gur but this happens to be my favorite one. It’s Nolen Gur Er Sondesh, an instant recipe made with just three ingredients and you get a delicious melt in mouth dessert that you van enjoy through out the winters and more. A simple recipe adapted from my Mom is a keeper for life. You can garnish the sondesh with various nuts as per your choices and can even shape them like burfi or peda. For making Sondesh one most important thing you need is the wooden mold. I sourced these molds from Kolkatta but you can check them online as well. But like i said even if you don’t have the molds, you can anyday enjoy them as a burfi, laddoo or peda.


To make this Instant Nolen Gur Sondesh without using Chenna all you need to do is crumble mawa and gur in separate bowls and keep aside. Heat a non stick pan, add crumbled mawa and stir for 1-2 mins on medium flame til it gets stick. Now add crumbled gur and cardamom powder and keep stirring vigorously still the mix shapes into a lump. Transfer the mix on a plate and let it rest till warm. Knead the warm dough till its smooth and lump free, Take wooden sondesh molds and greass the inner part with ghee. Pinch a lemon sized ball from the dough and shape into a peda. Add few pistachio flakes in the center and then place the mawa peda on the greased mold and gently press till it flattens and covers the circumference. Carefully remove the sondesh from the mold and keep aside on a plate. Similarly make more sondesh from the remaining dough mix. Allow the sondesh to rest for 15-20 minutes til it holds the shape well from outside. Your melt in mouth Nolen Gur Sondesh is ready to serve.

Recipe Notes
  • You can use various ingredients as garnish like Pistachios, Almond flakes, Raisin or Saffron.
  • Always knead the dough when it;s warm. If you allow it to cool down completely the mawa will get stiff and wont shape into sondesh.
