No Yeast Skillet Pizza

A pizza dough is usually made with APF and yest. The yeast is activated and then mixed with APF and set to rise. Later rolled into a base and baked with the toppings. The pizza i made today is a NO YEAST version and it also is a mix of 50% APF and 50% whole wheat flour made in a skillet. You can also use complete APF or complete wheat flour. it’s totally your choice.

No the question arise that if it doesn’t have yeast then how is the dough doing to rise. Well here the baking powder act as a rising agent to the floor and works pretty similar to the yeast. This recipe is for everyone who loves to eat pizza and wanna avoid the lengthy process of rising the floor for hours and baking in oven. Yes, it is made in a skillet and trust me it tastes far far better than the oven baked. It’s crust is crisp yet the inner part is soft and fluffy. Perfect for those lazy souls who wanna make everything in a jiffy. The original recipe is from Archana’s Kitchen You Tube Channel.

  1. Sift the wheat and APF together in a bowl and add olive oil and baking powder to it. Knead it using water to make a smooth and soft dough.
  2. Keep the dough aside to rest for 10-15 mins approx.
  3. Meanwhile take the veggies you want for the topping of the pizza, chop them into equal size.
  4. Heat 1 tbsp of olive oil in a pan and add chopped garlic and saute it in low flame. Now add the chopped veggies and saute them again nicely till they soften.
  5. Take the dough, knead it again gently and make two portions. Roll one portion into a ball between your palm and roll it out to make a pizza base on a dusted platform. The size of the pizza base should be according to the skillet in which you gonna make the pizza. I like thin crust pizza so i rolled it out thin.
  6. Heat a non stick skillet or a cast iron skillet. If you are using a cast iron skillet, make sure it is greased nicely to avoid the pizza sticking to the base.
  7. Once the skillet it hot, reduce the flame and place the pizza base. You will see small air pockets forming on the top, that is when your pizza base is baking properly.
  8. Brush olive oil with a silicone brush all over the pizza top and spread pasta sauce or pizza sauce generously.
  9. Now add the saute vegetables all over the pizza. Add grated cheese all over the vegetables and cover the pan with the lid and let it cook for 2-3 mins till the cheese melts.
  10. Remove the lid and let the pizza cook for another 1 min so that it gets a nice crust.
  11. Transfer the pizza into a serving plate and slice it with a pizza cutter and serve hot. You can now add oregano for seasoning.
