No bake , Eggless Caramel Pudding

An instant easy pudding recipe that reminds you of those exotic pudding which you ever had in an Irani Hotel or a Parsi food joint. Yes, this is instant, super easy, caramelized bread pudding (steamed). I had this pudding long back at one of my neighbor’s house, ever since i wanted to make it by myself. Unfortunately i lost all contacts with my neighbor hence i never got a chance to ask the recipe. Luckily i came a recipe by one of my co-blogger friend and the very famous  Dassana from Veg Recipes of India . The pictures on her blog looked similar to what i had long back. So i thought to give it a try. Oh My GAWDDD! this was the recipe i was looking for since ages. The taste was exactly the same what i had at my neighbor’s place….. delish! Never new that this exotic recipe can be made in such a jiffy with few basic ingredients in hand. I felt sorted!

Instructions
  1. Roughly chop the bread slices and keep aside.
  2. In pan, add milk and heat it till warm (no need to boil).
  3. Add sugar and cornstarch and keep stirring till sugar dissolves.
  4. Now add the bread pieces in the milk and mash well with a spoon. Add vanilla extract , mix well and keep aside.
  5. In a baking pan (any shape) add water and sugar and place the pan on stove top.
  6. Keep stirring the sugar water mix till you see bubbles appearing. Gradually you will see the sugar turning brown in color and caramelizing.
  7. Turn off the gas and spread the caramel equally on the base as well as the sides. You need to be very fast as the caramel sets quickly.
  8. Pour the bread batter in the caramelized pan and tap gently to settle.
  9. Cover the pan with aluminium foil and poke the top to make holes with a tooth pick.
  10. Heat water in a boiler and place the covered pan in it.
  11. Steam the pudding for 20-25 mins in medium flame.
  12. Once the pudding is done, allow it to cool down completely before you remove the foil.
  13. Carefully remove the foil and refrigerate the pudding for minimum 1 hour before serving. By doing this you will get clean slices.
  14. Remove the pudding from the pan gently and cut into slices.
  15. Garnish it with a mint leaf / chopped nuts/ cream, melted chocolate or fresh fruits.
