Today i have a very special guest of my blog, a name that needs no introduction, HETAL KAMDAR , one of the most talented and established blogger cum baker from the dream city Mumbai. Hetal is a successful name in blogger fraternity and is an amazingly talented person. Other than cooking, Hetal also has an artistic side to her nature. I have been knowing her from past 3 years. It was in 2014 when i first came in touch with her through a blog hop theme based group. The most sweetest and humble person who is not just grounded but also has a kind and helping nature. Today Hetal is sharing one of her specially curated Mexican breakfast recipe with me named Mexican Huevos Rancheros. I am so thankful to her for sharing such a delicious and healthy breakfast recipe with me and grace my blog with some gorgeous pictures.

There are couple of reasons why I am super excited about this post.  Firstly, this is my first guest post and secondly it is for a very special and a talented blogger friend Shaheen Ali.
 Honestly, I am totally enamored by the simplicity Shaheen possess and her ever charming and helpful nature which makes her a wonderful person. She is one of the most talented and hard-working blogger that I have seen. Her love for food and photography clearly reflects in her posts. Her blog is a reflection of her creativity and talent. She always takes pain to share the most drool worthy pictures of everything she cooks.  I really wish and pray that her blog reaches new heights every single day and she fulfills all her dreams. I am totally elated to share my little space with her and create a delicious breakfast recipe for her blog.
Breakfast is the most important meal of the day and it is very essential to incorporate this habit in every individual on a daily basis. Eating breakfast has a long-term health benefits, reduces obesity, blood pressure and heart disease.  It is the fuel of the day and helps to kick start your day better. There are wider range of breakfast dishes. Some may prefer pancakes and cereals, while others sandwich and eggs. Each one has their own choice and preference.
Egg breakfasts are the most healthier and an impromptu affair that can be cooked in a jiffy. I just love eggs in any form for breakfast and when there is Mexican Huevos Rancheros on the menu everything else disappears!!  This is a popular Mexican breakfast dish  consisting of eggs served upon lightly fried corn or wheat tortillas topped with  cooked salsa and baked beans.

If you are in a mood to eat some healthy and filling, try this dish with fried egg, red bell pepper salsa, baked beans and tortillas. It is a perfect way to fuel up your day with such amazing flavors. While it may seem an elaborate recipe to some but if you just plan a bit in advance it can save a lot of your time. 
Some of the tips that will help you to set the breakfast table in less than 30 minutes.
Prepare tons of red bell pepper salsa the previous night and refrigerate it for 3-4 days so the next morning so you just have to open your box and spoon it out on your eggs. Also, another tip for making this breakfast really quick is make the wheat or corn tortillas the previous night so the next morning you just have to heat it in a non-stick pan. Well if you are sorted out with all this it hardly takes less than 20 minutes to assemble and cook this Mexican Huevos Rancheros. It can also be accompanied with vegetable salsa, sautéed spinach and lots of cheese for a variation.

Mexican Huevos Rancheros - Guest Post By Hetal Kamdar
A popular Mexican breakfast dish consisting of eggs served upon lightly fried corn or wheat tortillas topped with cooked salsa and baked beans.

For Red bell pepper salsa :
Instructions
  1. Remove the requires quantity of baked beans from the tin and heat it in a small pan and keep it aside.
  2. Heat 1 tbsp olive oil in a non-stick skillet over medium heat and working one at a time fry wheat tortillas until lightly browned say about 15 seconds per side. Transfer this tortilla to a kitchen towel and repeat the same procedure with the second tortilla. Cover it with a foil so that they do not harden.
  3. Once tortillas are cooked, Heat 1 tsp olive oil in the same pan over medium heat and fry egg in the same pan one at a time till egg whites are cooked and golden yolks are set. Season it with salt, pepper and Mexican dry herbs.
For Red bell pepper salsa :
  1. Heat oil in a pan and once it’s hot add crushed garlic and sauté it.
  2. Add chopped onions and red bell pepper in it and sauté for 3-4 minutes till they are tender.
  3. Now add salt, chili flakes, Mexican seasoning and tomato ketchup.
  4. Mix everything well and keep this red bell pepper salsa aside in a bowl.
How to serve :
  1. Place 2 tortillas on a serving plate and top it up with 2 fried eggs.
  2. Spoon red bell pepper salsa on half side leaving the yolks exposed and spoon baked beans on the other half.
  3. Garnish it with fresh parsley and serve it immediately while its hot.
