Kaacha Gola

Kacha Gola is the very famous sweet from West Bengal which is made of fresh paneer or chenna and flavored with cardamom and saffron. The sweet is not just quick but can also be made in a jiffy, specially when there are sudden guests at your home. The melt in mouth fudge tastes amazing when refrigerated for some time before serving. Kacha gola is usually not as sweet as compared to the other Indian sweets. The sweetness in mild and the main aroma and flavor is infused by cardamom and saffron. Kacha gola is often served during special occasions like marriages, festivals etc. Today my son Abeer suddenly asked few of his friends to come down home. With kids at home, you have to be very careful with what you serve them, didn’t wanted the kiddos to have those junked and unhealthy food. Hence i quickly made some Kacha Golas for the bachha party and was glad to see the kids enjoying the healthy sweet with love and happiness. KAACHA GOLA | SWEET COTTAGE CHEESE BALLS

  • 300 gms Cottage Cheese Paneer Fresh / Chenna /
  • 1/2 cup Sugar Powdered
  • 1 tsp Cardamom powder
  • pinch strands Saffron - full of
  • 1 tbsp Milk

  • 300 gms Cottage Cheese Paneer Fresh / Chenna /
  • 1/2 cup Sugar Powdered
  • 1 tsp Cardamom powder
  • pinch strands Saffron - full of
  • 1 tbsp Milk
Instructions
  1. Take fresh cottage cheese or paneer and mash it well with the help of your hands. Break all lumps to make it as smooth as possible.
  2. You can use store brought paneer only if it is fresh, but i prefer using home made paneer for making kacha gola.
  3. For making paneer at home, you need to boil 1 liter milk and add 2 lemon juice and simmer the gas and boil for another few minutes till the milk clutters and the chenna gets separated from the whey. Strain the whey by passing it thrrough a fine muslin cloth. Collect the chenna and hang the muslin cloth for few minutes so that the whey strains off completely. Take the fresh chenna or paneer and follow step-1.
  4. Once the paneer is smooth enough, add cardamom powder, soaked saffron and powdered sugar. Mix everything well to make a soft and smooth dough.
  5. Take a tray and arrange mini muffin paper liners on it.
  6. Pinch a lemon sized ball from the paneer mix and roll it between your palm to make a smooth ball.
  7. Place the ball on the paper liner and similarly make more.
  8. Your kacha gola is ready and would taste great if you refrigerate it for minimum 1 hour before serving.
Recipe Notes

Kacha Gola is an amazing sweet that can be gifted to your loved ones during festivals or special occasions. All you need to do is, take a old cookie box or a sweet box that you kept reserved from last time you bought sweets. Arrange the kacha golas in the box and decorate the box to give a special touch. Gift it to your near and dear ones and make them happy!
