Instant Mango Granita

As a recipe developer sometimes it really becomes tough to fulfill the expectations of clients. Sometimes you just need to be as simple as you can with your creativity. These days i am in a series of making dishes (all kind) using soft drinks/cold drinks etc. We usually come across a situation where we find a bottle or half of cold drink left in our fridge which later no one attempts to finish and at last it all goes a waste. This happens with me often after any house party, there is a lot of cold drink left which next day no one feels like having also because all the soda evaporates by then.


The best way is to re-cycle those aerated drinks or the fruit drinks and make some amazing dishes that can again be relished and enjoyed by the family and kids specially ( that goes without saying). Recently i made Veg Kothey using ready made mango drink and Coca Cola Bundt Cake using left over Coke . So now it’s again time to re-use some left over mango drink and make some delicious granita. You can use any mango drink available in market, like PaperBoat, Real, Slice or even Frooti. The recipe is instant as it requires just one ingredient and no time to prepare, but yes, you will have to wait for it to freeze before enjoying.

I usually make sorbets from different fruit juices, and mangoes are the most favorite option in summers. If you are a mango lover and more over if you love sorbets, you don’t now need to wait for summers to get this fruit. Just a bottle of any mango drink and you are sorted for life time.   1. Take a 1/2 liter Mango juice bottle or any other left over mango soft drink, shake well and pour in an aluminium ice cream tray.
  2. Set to freeze for 1 hour.
  3. After 1 hour, stab the frozen drink with a fork to get a grainy texture and again freeze it.
  4. Once the drink is nicely frozen, scrap it with a fork and collect in a serving bowl/glass.
  5. Garnish with mint leaf and serve chilled.
