Instant Gujrati Khatta Dhokla

I have always been fond of Gujrati cuisines, specially the snacks they serve has a wide range of variety. One of their many amazing snacks is “Khatta Dhokla”. It is fermented and steam savory cake made from rice, urad dal along with yogurt. Though i have tried khatta dhokla couple of times and it was a hit in my family as well. But recently i came across a recipe of my co-blogger friend Radha Natrajan S and that is when i immediately decided to lay my hands on them.

Her recipe was quick and easy along with full of flavors. Though this is an instant version of the original Gujrati khatta dhokla recipe, yet it did complete justice and didn’t compromised at all with it’s original taste. We usually make Idli’s a Dosa’s in our routine breakfast. In my family, making idli is almost every alternate day…. we really have a strong dedication towards South Indian cuisines as well…. Aah! indeed a sign of a true India (wink wink)

Anyways, so what i were saying was that for making this instant khatta dhokla all we need is some fermantated dosa/idli batter , thick curd or yoghurt. Sounds easy! isn’t it? Well yes, it is….so lets move on to the recipe to see how quickly the dish is made.

Instructions
  1. Take 2 cups of thick fermantated batter of dosa/idli in a large bowl.
  2. Add 1 cup of yoghurt in the batter and combine well and keep aside.
  3. Now in a grinder, add chopped green chillies and ginger and grind.
  4. Now add the grounded mixture into the batter and mix well. Adjust salt to taste.
  5. In a steamer or a large vessel keep water to boil.
  6. Meanwhile grease a deep broad vessel and pour the batter into it.
  7. Now keep the container inside the steamer and close the lid.
  8. Allow the dhokla to steam for around 15-20mins. or till the tooth pick comes out clean.
Tempering:
  1. In a pan heat oil and add mustard seeds in it.
  2. As soon as the seeds starts to splutter, add whole red chilies, curry leaves and sesame seeds.
  3. Fry them together for few seconds and turn off the gas.
  4. Now pour the tempering all over the dhokla and allow it to cool. Sprinkle red chilli powder all over (optional)
  5. As soon as the dhokla is cool, cut into pieces and serve with your favorite wet or dry chutney
