Instructions
Lets make the sugar syrup first:
  1. The syrup should be made earlier and kept warm. Take a deep pan and 2 cups of water.
  2. As soon as the water heats up add 2 cups of sugar.
  3. 3. Add cardamom crushed/ powdered and few starnds of kesar.
  4. Mix with spoon and heat for 5-10mins till the sugar gets dissolved in water. Do not overheat, else the sugar will get caramalized.
  5. Add few drops of lemon, this will ensure that after cooling the syrup will not solidify.
  6. Transfer this hot syrup into a serving bowl.
Lets make Gulab Jamuns now:
  1. Take khoya/mawa in a large bowl, mash it well... (If you have refrigerated it, bring it to room temperature first then proceed).Now add maida , cooking soda and mix well.
  2. Add water/milk little by little and gather together to form a dough (it will be slightly sticky.) Don't knead it just gather them together to form a dough.
  3. Take a pinch of a small ball and roll smoothly. Don't apply pressure while rolling and also don't roll them tight...the balls should be smooth.
  4. Once you are done with making the balls of equal size, place them all on a plate.
  5. Heat the oil on high and then lower the heat to medium.
  6. Slip in the balls into the hot oil from one side, one by one. Intially the balls will sunk in the vessel, but after few seconds they will rise up.
  7. Make sure the temperature of the oil is correct. If the oil is too hot then the gulab jamuns will tend to break.The balls should be fried very slowly under medium flame till they achieve brown color.
  8. Drain in tissue and immediately add it to warm sugar syrup.
  9. Finally add rose essence.
  10. Cover and let it rest for 2 hrs for the jamuns to absorb the sugar syrup well.
  11. Leave the gulab jamuns in sugar syrup overnight for best results.
  12. Garnish them with chopped Almonds and Serve them warm or at room temperature.
