I am not a salad fan, i know that not good for me, but i just can’t eat vegetables raw except cucumber. Since childhood i had been getting scoldings for this bad habit of mine of not eating salads. I still remember , it was my teenage when i was first encountered with the most simple and delicious looking salad which that time i thought is a cooked vegetable…yes i know i was a dumb! Well that was just a simple moong bean sprout salad which my mom served me saying its a sabzi (clever mom). Those swollen moon been with sprouts coming out like strings was served to me with lots of chaat masala and lemon so that before i get to identify the taste it’s down in my tummy (like i said..clever mom) . Years passed by and i grew up thinking that i was having a sabzi daily that tasted amazing till i reached my college and some fellow told me that it’s a salad (heart break). But no worries because till that time, my palate has accepted it well.
So now following the legacy, i started to play the same trick on my son as well. He is again not a salad eater, so the best way i could feed him is making a simple yet super tasty and nutritious Moon Bean Sprout Salad and to make it even more interesting, i serve this to him in small cute little cucumber cups (boats will be too big for him to finish). Ideal for kids tiffin or can even be served in your brunch parties. Quick and can be made in a jiffy, the only time consuming process is to get the bean sprouted. So i would suggest to get that done in bulk, zip lock it and freeze. So that next time when ever you want to make this salad or anything out of the sprouts, just take them out of the freezer, soak in water for some time and your sprouts are ready to be used.

- 1 cup Whole Green Moong Sabut Moong
- 1/2 cup cucumber chopped
- 1/2 cup onion chopped
- 1/2 cup tomato chopped
- 1/2 cup carrot grated (optional)
- 1 tbsp lemon juice adjustable
- 1/2 tsp salt adjustable
- 1 tsp chaat masala adjustable
- 2 cucumber peeled & cut into three pieces

- Soak moon bean for 2-3 hours. Drain water completely and wrap the beans in a clean dry cloth and keep inside a bowl in a dry place overnight to get sprouted. If you want more longer sprouts then keep it wrapped for 3-4 hours more.
- Once the beans are sprouted, collect them in a large mixing bowl and add chopped onions, tomatoes, cucumber, carrot (optional), some salt to taste, chaat masala to taste and some lemon juice.
- Toss them well or mix with a spatula till everything incorporates nicely.
- Take a piece of cucumber cut cylindrical and using a spoon, scoop out the center to make a cavity.
- Take spoonful of sprouted salad and fill inside the cucumber cup. Arrange them on a lettuce or a cabbage leaf and serve.
You can make cucumber boats and fill the salad and serve. This salad can also be used to make a healthy and nutritious sandwich or can be served as a pani puri filling in your kitty parties.
