Floral Fondant Cake

December is the month of celebrations in our family. It starts with my sister’s birthday that comes on 5th Dec. It’s been years we haven’t been celebrating it together as she stays in Mumbai. This year is was her deep desired wish to celebrate her special day with family and friends. What better start this awesome month can get … so i decided to make it very very special for her. Being a blogger it’s obvious that everyone in my family expects a lot from me regarding food and party…lol. So as expected my sister came up with a wish that she needs a fondant cake exclusively designed for her that can very well signify her nature as well. The demands were very clear, soft colors, subtle patter, floral, elegant, extremely beautiful, gorgeous and very very girly! It took me a month to do all RND. After watching lots of videos on youtube and reading various websites, i finally tried my hands on fondant. It was a completely new experience for me and trust me i loved doing every bit of it. As i was new to fondant, i chose to follow the recipe from one of my co blogger friend Pooja Khanna’s blog www.2blissofbaking.com 


The cake was a simple vanilla sponge cake, as i wanted to focus main on the fondant and the art work and as it was my first try i didn’t wanted to complicate things for myself. Pink and green were my color preference. A ribbon bow on the cake top with lots of daisy flowers surrounding the cake was the design that run through my mind for all these days before execution. Finally the cake turned out exactly what i had imagined in my dreams. More that that i was even happier to see the bright and broad smile on my sister’s face … yes! she was amazed with the final result. I guess that is what i wanted and that reaction shall always remain very precious to me. It’s a happy me again 🙂

Instructions
  1. Collect all the ingredients and the recipe infront of you on your kitchen counter as you need to be really fast.
  2. Take water and ad gelatine into it and allow it to rest for few minutes till the gelatine sets.
  3. Meanwhile in a separate bowl, add light corn syrup, glycerine, vegetable extract and vanilla extract and keep aside.
  4. Microwave the set gelatine for 30 seconds on high temperature till it melts down. Now add the corn syrup mix into it and again microwave for another few seconds till the vegetable extract melts completely. Allow it to cool in room temperature.
  5. Meanwhile sift the icing sugar in a separate bowl/ dough making tray and keep aside.
  6. As soon as the gelatine mix is cool, make a well in the center of the icing sugar and pour in the liquid mix. Now start folding the icing sugar inwards to make dough
  7. Transfer the assembled dough on a dusted counter (dust it with icing sugar) , grease your hands with vegetable shortening and start kneading it again to make a soft and supple dough. The dough should be elastic and the consistency should be exactly like the kids play dough. If you find your dough dry, you can add little water and knead it again. To get a perfect fondant dough you will have to knead it really well and this may take around 8-10 mins.
  8. If you wish to color the dough, then divide it into equal portions and cling wrap each portion tightly and place them into an air tight container and allow it to rest for a day before use.
  9. Now take a portion and add your choice of color and knead it well by greasing your hands with vegetable shortening again. This will add a sheen to the dough. I wanted to make daizy flowers hence i added pink color to a portion.
  10. Roll out the dough on a dusted platform. You can dust the floor with corn starch and roll out using a rolling pin. The thickness should be as per your requirement.
  11. Cut into flowers using fondant plungers using different sizes.
  12. Place the flowers on a tray and allow it to dry for another 48 hours before using it on the cake.
  13. Similarly make ribbons of different sizes as required for the bow and allow it to dry for another 48 hrs before use.
  14. Collect all the fondant accessories and store them in a box. Now place them on the cake according to the design.
  15. Your fondant is ready to use. You can store the cling wrapped dough in an air tight box for a month in room temperature.
  16. Sift flour , baking powder and baking soda together in keep aside.
  17. Mix sugar and butter in a bowl and blend till it becomes creamy.
  18. Add eggs one at a time and blend all together to form a creamy fluffy mix.
  19. Add vanilla extract and mix again till it incorporates well.
  20. Add the dry mix into the wet mix slowly and fold in together to make a fine smooth batter.
  21. Whisk thick curd and add in the batter, fold everything again so that the curd mixes well with the batter.
  22. Pre heat the oven at 180 degree C. Meanwhile line a round 9" inch baking pan with a parchment paper and pour in the batter. Tap the pan to settle the air bubbles and bake it for 35-40 mins at 180 degree C. Insert a tooth pick in the center of the cake, if it comes out clean, the cake is done, else bake it for another 5 mins.
  23. Allow it to cool completely on a wire rack. As i need a high cake i made two similar cakes.
  24. Once the cake is cool, slice it into two equal half from the center. With two cakes you will get four halves.
Assembling and Cake Decoration :
  1. Take whipping cream and blend it with a electric hand blender till u get soft peaks. Add icing sugar and whip it again for few seconds .
  2. Place the first half on the cake turn table or on an upside down plate (i don't have a turn table so i prefer placing it on a plate and later shift it on the cake board) and with the help of a silicon spatula spread whipping cream generously.
Recipe Notes

3. Place another half of the cake over it and spread the cream all over again. Similarly place the other two halves as well applying cream all over.

4. Now cover the entire cake with cream from top and the sides. This will help the fondant to stick to the cake properly.

5. Now transfer the cake on the cake board and cover the cake with the rolled out fondant sheet and cover it from all sides. Slice off the extras with a pizza cutter to give a smooth edged finishing. 

6. Now by applying cream to the desired areas f decoration start placing the flowers. Similarly place the ribbons on the top of the cake to shape it like a bow. Decorate it more by sticking silver balls all over.

7. Place small equal sized fondant balls on the border of the cake to make it look jeweled.
