Ferrero Rocher Chocolate Mud Cake – Eggless

Valentine is the day of Love, Care and Affection! The special day in a year when you get an opportunity to tell people around you, how much you love them. Though everyday is Valentine, but in today’s busy life each one of us somewhere miss telling our partner that we love them immensely. Hence, the day 14 Feb is special to all those busy people who forget telling their loved ones how much they are in love. A special day to make someone special feel out of this world. The day to care, pamper and spread loads of love.


Though i am an extremely romantic kind of a person and i actually don’t need any special day to express my love, still Valentine’s day is something that definitely adds up a lot of romance in my life.

Let me tell you that i am a big time Backstreet Boys fan and i keep listening to their songs often. But it’s only Valentine’s day when i love to hear this particular song the whole day….

Although loneliness has always been a friend of mine

I’m leavin’ my life in your hands

People say I’m crazy and that I am blind

Risking it all in a glance

And how you got me blind is still a mystery

I can’t get you out of my head

Don’t care what is written in your history

Apart from all this song and dance, one best thing for a woman to do on Valentine’s day for her man is to make an exotic dessert. Yes! this certainly helps and add on a little more affection to the gesture. As we all know, way to a man’s heart is through is stomach! So in my opinion the best way to express our love is to make good food followed by an amazing dessert. So when it comes to a Valentine special dessert, chocolate and strawberries are a must… symbol of love!

This valentine, i ended up making a special eggless Ferrero Rocher Chocolate Mud Cake topped with lots of home grown strawberries. Wanna know how??? Let’s check out the recipe ….

HOW TO MAKE A FERRO ROCHER MUD CAKE.

  1. Pre heat the oven at 180 degree C and line or grease a 8″ inch baking pan and keep aside.
  2. Sift flour, baking powder, cocoa powder and salt twice and keep aside.
  3. Mix instant coffee in water and keep aside.
  4. Beat powdered sugar and oil till creamy. Add lemon juice, thick curd and vanilla extract and whisk again.
  5. Mix dry ingredients with the wet ingredients and fold to make a smooth batter by slowly adding coffee mix. (To be sure you picked the right one, make sure to visit coffeeble )
  6. Pour in the cake batter in the lined pan and bake for 30-35 mins or till the tooth pick inserted in the center comes out clean.
  7. Allow the cake to cool down completely on a wire rack.
  8. Meanwhile in a small bowl mix 3 tbsp of icing sugar and keep aside.
  9. Slice off the cake from center in two halves and brush both halves with icing sugar water using a silicone brush. This keeps the cake moist from inside.

For Making Ganache :

  1. Take finely chopped chocolate pieces in a bowl and add 2 tbsp butter over it.
  2. Heat cream in a pan and as soon as you see bubbles appearing, pour it all over the chocolate chunks and let it rest for 5-6 mins.
  3. Blend well with a electric hand blender to make a smooth and silky mix.
  4. Refrigerate the ganache for 20-25 mins before use.

Garnish :

  1. Spread ganache generously all over the bottom half of the cake and place the next half on top.
  2. Take a spatula and spread ganache all over the cake covering the sides as well. If you find difficulty in spreading the ganache evenly on the cake, dip the spatula in hot water and then spread the ganache.
  3. Place ferrero rocher cake on the top of the cake at equal distance and place 5-6 strawberries in the center.
  4. Slice few strawberries and stick them between the chocolate balls.
  5. Refrigerate the cake for 2 hrs before use!

Note :

You can use Vinegar instead of lemon juice. The cake can be made in any desirable shape and the garnish totally depends on your imagination.
