Easy Healthy Granola Bars

by Shaheen Ali

Few days back while organising my pantry I noticed a sealed pack of old fashioned rolled oats and also few packets of dry berries and nuts. Right on time when my husband was travelling abroad it just took me a minute to plan what I can do with those stuffs. A box full of energy bars flew along with my husband to keep him calm and fight with his hunger panks. Granola bars are the best gift one can ever give to a person who is a weight watcher. An easy recipe that combines to make an amazingly delicious and energetic bars to keep you energetic the whole day.

To make granola bars heat a non stick pan and lightly dry roast the rolled oats and collect in a bowl. Now add the roughly chopped mixed nuts, dessicated coconut and dry roast them and collect them in the bowl with oats. Mix all with a fork and keep aside. In the same pan add butter and wait until it melts down completely. Now add brown sugar and honey, keep stirring till the sugar dissolves. Remove the butter mix from heat and add vanilla extract and kosher salt. Pour the mix over the roasted oats and also add the sunflower seeds and melon seeds along. Mix and fold till everything combines well. Take a square baking tray and line it with a parchment paper. Transfer the prepared mix into the tray and evenly spread using a rubber spatula or the bottom of a greased measuring cup to press the mixture into the pan. Chill the granola bars for at least 2 hours. Lift the bars from the pan using the edges of the foil or parchment and place them on a cutting board. Cut into desired shape/sizes and serve.

Sharing a picture of my healthy granola bowl that I often enjoy with some hot milk.
