Sugar Free Carrot & Sago Pudding

Ever since the Navratri began , i have been awing all the delightful and sinful fast recipes all over the social media. Hence, thought to contribute a little from my end as well. This post is dedicated to all my friends in India and across the globe fasting these 9 days.


Saboodana Kheer is one such common preparation done at homes during these 9 days. As i am keeping a check on my diet and sugar intake, hence i chose to make a sugar free version. Didn’t wanted to add those artificial sugar free substitute which are actually of no benefit. So i decided to go for some natural sweetening agent. Had few beetroots and carrots in my pantry, beetroot is indeed a strong and active natural sweetening agent but that could also changed the color of the kheer i had in my mind. As i was using saffron i wanted something hat could enhance the color and provide sweetness equally. So the best option was carrots. Luckily the carrots i had were sweet enough to enrich my dessert. Finally my Carrot and Sago Pudding turned out exactly how i wanted and we all enjoyed its fullest. So let’s proceed to see the ingredients required to make this Navratri special guilt free dessert.

CARROT & SAGO PUDDING/ KHEER ( SUGAR FREE ) - NAVRATRI SPECIAL

Ingredients
  • 500 ml Milk - (I used Amul full cream)
  • 3/4 cup Sago / Saboodana Pearls
  • 1 cup Carrots Sweet - (grated)
  • 1 tsp Butter Ghee Clarified /
  • 1/2 tsp Cardamom powder
  • 1 pinch Saffron
  • Dry Nuts :
  • 8 Almonds (blanched)
  • 8 Cashews (broken)
  • 1 tsp Pistachios - (chopped)
  • nuts rose petals Keep few and dry separate for garnishing.

  • 500 ml Milk - (I used Amul full cream)

  • 1 pinch Saffron
  • Dry Nuts :

  • 1 tsp Pistachios - (chopped)

Instructions
  1. First tale 1 tbsp of milk and soak saffron in it and keep in the refrigerator till we do rest of our preparations. The saffron leaves a darker color when soaked and refrigerated.
  2. Wash and soak sago pearls in a bowl for 40-45 mins before cooking.
  3. Heat ghee in a wok and add grated carrot in it. Saute it for few minutes till the raw smell goes off and the carrots take a dark color.
  4. Add milk in the same wok and let it boil. As soon as it starts boiling, add cardamom powder and soaked sago pearls. Cook on low flame by stirring continuously.
  5. Carrot has it's natural sweetness so here we won't be adding any sugar. Just make sure while making this pudding, you choose the sweetest carrots.
  6. You will now see the milk getting thick. Add saffron soaked milk and chopped nuts and save few for garnishing at the end.
  7. Allow it cook for some more minutes till the milk starts getting thick and creamy.
  8. Turn off the gas and transfer it into the serving bowls or glasses. You can either serve it hot or chilled.
  9. Take some chopped nuts and rose petals and garnish the kheer before serving.
