Stir Fried Broccoli & Bell Peppers

Broccoli is the most loved vegetable that comes from the cabbage family and in India it categorizes under exotic vegetables. Similarly, coming from capsicum family, bell peppers are not just colorful but also and excellent source of Vitamin A, C & B6. Stir fry vegetables are simply loved in my family and my son is a huge fan of broccoli. Though now as we a re running out of season for broccoli, i requested my sister to get them from Mumbai so that i can continue making my son’s stir fry vegetables even in monsoons. Excellent source of nutrients and absolutely inviting, this colorful preparation not just attract children but is also very healthy.


I usually make dry stir fry veggies but as my son wanted to have them with some rice and also with a saucy texture, so keeping all his demands in mind i opted to add some chicken broth in it that is equally healthy and also provides some consistency to the vegetables. Small broccoli florets teemed up with sliced red and yellow bell pepper is stir fried first and then softened by cooking with some chicken broth. You can also add some tofu, paneer, mushroom or chicken to make it more interesting. A perfect side dish and also an amazing tiffin option with rice.

Instructions
  1. Wash and cut vegetables as required. Keep side.
  2. Heat olive oil in a wok (if you don't have olive oil, use any vegetable oil), simmer the gas and add chopped ginger and garlic and saute for a while.
  3. Now add broccoli and bell pepper and saute for 4-5 mins in medium to high flame.
  4. Season with salt, and black pepper powder and saute for another couple of minutes.
  5. Add chicken broth (you can also use any vegetable stock, 1/3 cup) and stir well.
  6. Cook till the broth thickens and incorporates well and the veggies get crisp-tender.
  7. Turn off the gas, add some freshly crushed black pepper and serve hot with rice.
