Hi guys, welcome back to my brand new series of guest post where i show case the talent of many of my food blogger friends who themselves are doing extremely well in their filed. This category is a small attempt to show some love for each other and display the talents to my readers.

Year 2016 was a roller coaster ride for my blog, double migration in a single year wasn’t an east task. There was a time where i almost lost interest in blogging just because of this chaos. Anyways, all is well that ends well, so now i can say that i am back in action and this year (2017) i thought to began with the continuation on guest post series. The series has been divided into two categories, that means, i had asked my friends to contribute in any of the two categories given by me. This time i started the series with healthy breakfast recipes and valentine recipes. So in coming few days you shall be seeing plenty of mouth watering breakfast recipes along with some delectable valentine recipes as well.

Today the guest on my blog is AMRITA IYER  from The Food Samaritan . This Mumbai based young blogger is one amazing talent we have in our blogging world. Her blog is a collection of memories gathered through her culinary journey. Food Samaritan has some amazing collection of exotic Indian and International recipes. Do check out this amazing blog to get an amazing culinary experience. I have been knowing Amrita from past one year and in such a short time we have become very good friends. To me Amrita is no less than a younger sister. Chirpy bubbly girl, who loves to talk a lot on almost everything and anything, is an equally serious person when it comes to blogging. Starting 2017 on a positive note I have taken a pledge to eat fit and stay healthy.Exercise and diet comprise the two points but its imperative what we eat and when we eat it.I have drawn up a comprehensive plan after consulting 3 dieticians and 2 very good doctors and intend to follow it to the core.

Sharing a part of the plan through Shaheen Ali’s blog Spoon,Fork and Food gives me great pleasure!I regard her as an elder sister and have discussed many an issue which I feel important or things I have felt are a threat to the blogger community. Shaheen Di (as I call her  affectionately; Di is referred to an elder sister in the Hindi language) has been one of the most helpful and loving people whom I met in the virtual world!It takes some time to know a person and once we are on good terms the friendship lasts for life!

I consider it my honor to contribute a guest post to Shaheen Di’s blog.She is one person I have seen really works hard.She works all day in the kitchen,then in capturing absolutely sensational pics of her food and proudly presents the pics which make many a man,woman and child drool!As a blogger I know what it is to cook,capture pics,write the recipe,edit it,edit the pics and present it to the world.There are so many other factors to see which form the “base” of presenting the recipe.I have seen Shaheen Di rise,win accolades,have her share of issues (for which I have tried to make her laugh – don’t know if I have succeeded) and yet springing back and moving on!I am proud to be associated with her and I decided to plan a tasty breakfast recipe as my guest post!This recipe is made using homemade bread.I baked an Italian style loaf with seasoning and sun dried Tomatoes and used it next day for the recipe.You can use store bought sandwich bread,a Baguette (the French long breads) or even a Pizza base for this recipe.If made with whole wheat bread the health quotient increases and so also for Multi grain Breads.

This recipe uses Black Eyed Beans or “Chawli beans” as we call it in India.You can use any king of beans,Baked beans out of a can,any kind of canned beans,chickpeas (safed channe) or refried beans for which however the calorie content might increase.I have used Pizza seasoning and you can use whatever you like even one kind of herb will do!

Instructions
Prepare the bread :
  1. Butter the bread slices and toast them on a hot Tava/pan till golden brown on each side.Keep aside.
Make the topping :
  1. Heat the butter and add the Pizza seasoning. Add the beans and stir.
  2. Mash the beans coarsely with a Potato Masher and add the cheese and Chilli Flakes. Mix well and keep aside.
Assembling the Sandwiches :
  1. Put one slice of bread on a plate and top it with a Lettuce leaf.Spoon 1/2 tbsp of the beans and cheese paste on top and spread well.
  2. Sprinkle freshly chopped Coriander leaves on top.
  3. Arrange roundels of Onion and Tomato.Serve immediately with fresh,hot Coffee or freshly made Fruit juice.
