It was a year back from today when i started my blog just to keep my sanity in check. The journey within this one year taught me so much that helped me getting better and bigger. By God’s grace and good wishes of all my near and dear ones, my blog/website got both National and International recognition. During this term i was pleased and proud to c my recipes getting published in various leading online food magazines/ twitter and expert Chef’s websites. This wouldn’t have happened without all of u.

So today while celebrating my blog’s 1st Anniversary i would like to take the opportunity to thank the Almighty first and then my family and friends who always supported me and encouraged me to confidently pick my path and walk on it with grace and dignity.

So this calls for a celebration and what better it can be when celebrated with the king of fruits.

In ancient times princes used to pride themselves on the possession of large Mango gardens. It used to be a matter of pride and prestige. Ever since the Mango was known to be the King of fruits. One amongst many varieties of mangoes is Alphonso. This is suppose to be the most pulpy and the sweetest breed of mango. Last year i had an opportunity to visit my sister in Mumbai where i got to taste Aamras. The Aamras was thick and creamy with a super silky texture and was served with puris in many leading restaurants and hotels. Though Mumbai has a mixed culture of Gujrat and Maharashtra , Aamras has to be one of it’s common favorite dessert served during whole summers. The mild aroma of saffron & cardamom gives it a perfect flavor. Few days back my mom gifted us with a crate full of best quality mangoes. Since then i had decided to make Aamras and enjoy it with puris. So finally the day arrived and called for some celebrations too. So we had this awesome mango dessert with hot and fluffy puris… Aahaaaa! life seems so perfect!

Instructions
  1. Wash, peel ans slice the mangoes and blend in a blender to make thick pulp.
  2. Now add cardamom powder , sugar if the mangoes aren't sweet enough and crushed saffron strands. Blend it all again to make a fine pulp. Make sure there should be no lumps.
  3. Now add fresh cream and give it a quick blend again. You will now see the creamy and silky texture.
  4. Pour in small bowls and refrigerate it. Right before serving, garnish it with chapped cashew nuts and saffron strands.
Recipe Notes

Serve cold with hot and fluffy puris.
