Yakhni Gosh – Mutton in Yogurt Gravy

Yakhni is an authentic mutton/lamb dish that belongs to Kashmiri Cuisine. It is prepared in yogurt or curd along with assorted spices. Simple and easy to cook and doesn’t actually require skilled hands. It’s found that in many Kashmiri dishes there is a use of Mustard Oil which itself leaves and amazing cooking aroma and when combines with fennel powder the dish truly becomes exotic. Yakhni is so popular in the valley that it also has it’s veg version. For vegetarians, Lauki Yakhni is a delight to have.


In the holy month of Rmadan , it’s noticed that we Muslims prepare various non veg dihes to open our fast and even for dinner. So keep the trend alive, today i made Kashmiri Yakhni Gosht, i used goat meat as it’s difficult to find lamb here. The recipe i used for making Yakhni is inspired by Kashmiri Food Recipes and you can find the original recipe there.

Instructions
  1. Wash the mutton and drain water. Keep aside.
  2. Heat 1/2 cup of oil in a pressure cooker and add mutton in it.
  3. Add salt and hing, fry for five minutes on full flame.
  4. Now add around xbd glass water and add fennel powder, black cardamom, cinnamon stick & bay leaves. Pressure cook it up to 3-4 whistles or till the mutton is cooked.
  5. Take a frying pan, put one remaining oil and heat it till well, remove it from gas and put shah jeera and cloves in it.
  6. Again put the pan back on low flame and stir for one minute, add whisked yogurt and turn flames on high, keep stirring continuously so that it doesn't curdle till it boils.
  7. Now add this boiling yogurt and pure ghee in the mutton and keep it on low flame for 5-6 minutes.
  8. Turn off the flames and garnish with fresh chopped coriander.
  9. Serve hot white boiled rice.
