Whole Chicken Tandoori

Tandoori chicken is a dish popular in South Asia, Malaysia, Singapore and Indonesia consisting of roasted chicken prepared with yogurt and spices. The name comes from the type of cylindrical clay oven, a tandoor, in which the dish is traditionally prepared. The chicken is marinated in yogurt and seasoned with the spice mixture tandoori masala, pepper, red chili powder or Kashmiri red chili powder is used to give it a fiery red hue. A higher amount of turmeric produces an orange color. In milder versions, both red and yellow food coloring are sometimes used to achieve bright colors, but turmeric powder is both mild and brightly colored. It is traditionally cooked at high temperatures in a tandoor (clay oven), but can also be prepared on a traditional barbecue grill.

Recently i got a new friend on facebook … was glad to connect with her as she had a small business of home made masalas in Chennai. Anisa Arif, the owner of ZAIKA gifted me some awesome Mughlai masalas that can be used for making biryanis, kebabs and BBQ. The parcel had a packet of Tandoori masala too which i had used today for making this beauty. The designing and the packaging was awesome and the moment i opened the pouch, my house was filled with it’s amazing aroma. I could easily smell the freshness of the grounded spices. Something i was searching for a long time. The fragrance was so strong that it stayed on my palm the whole day….wow!

Finally my chicken tandoori is done and i must admit that the credit goes to ZAIKA. It indeed added lots of flavors to the chicken which i were missing somewhere for all these days. The taste was authentic. The ones you get in the typical ‘muslim mohalla’ like Mohammad Ali Road in Mumbai or Chatori Gallis of Lucknow. Instructions
  1. Clean and wash the chicken at least twice and leave it in a bowl so as to drain out as much water as possible.
  2. Firstly pour some mustard oil and rub the chicken gently with hands. You can use a brush if you want, but Iu2019m a rather u2018hands-onu2019 person.
  3. Use a knife to make cuts so that the masala can get inside the flesh well, while marination.
  4. Take a clean and dry bowl. Mix thick curd, ginger-garlic paste, lemon juice, Zaika tandoori masala, salt and some oil to make marination.
  5. Coat and rub the masala with hand all over the chicken. Turn the bird and get your fingers in as far as you can so as to properly spread the spice mix.
  6. P.S : Mustard oil, ginger-garlic paste and condiments like oregano already adds a bit of saltiness. So be careful not to over-do it with spoonfuls of salt.
  7. Cover the bowl with a cling foil and marinate the chicken in refrigerator for minimum 4-5 hours.
  8. Pre heat the oven at 200 degree C. Meanwhile fix the chicken in the rotisserie.
  9. Grill the bird for 30 mins first. Take it out and brush some oil all over and again grill it for another 15 mins or till the chicken gets roasted.
Alternative Grilling Options :
  1. Grill over coal, basting with oil in between till done, about 10-15mins.
  2. You can also grill it in a grill pan with 2-3 tsp butter for 12- 15 mins. (Take large pieces of chicken. Whole chicken cannot be grilled in pan)
  3. For microwave convection, pre heat at 180 degrees C and place the chicken on a non stick tray and grill for 45 mins. (You can turn it upside down in between just to make sure the bird gets cooked for all sides.)
  4. Serve hot with your favorite salad, lemon wedges and a spicy dip !!!

It’s simple, yet effective. A lot of times
