Tutti Fruity Bread Pudding

I can never get tired of pampering my son…. specially after a long illness when my son asks for a treat  have to give him something special. For a week my baby had fever and almost lost his appetite. It was a tough time for him as well as me too. The moment he recovered the first thing he asked me to make was a custard. Though he always like to relish the regular fruit custard, but this time i thought to stretch a bit and add some breads to make a pudding.


As expected the pudding turned out well and my son enjoyed it completely. The smile on his face and the satisfaction in his eyes made my day and was worth the effort applied. The pudding was completely mouth melting and guilty free :p

The soggy breads layered with custard n nuts made it absolutely divine. Just added some tooti fruity to make it more interesting. U can even layer various fruits like apple, banana, grapes etc. or add some jam or jelly.  I chose to keep it simple yet fancy.

Instructions
How to make custard:
  1. Mix 2 tbsp of Vanilla custard powder with 3 tbsp of warm milk and make a smooth paste without any lumps. Your custard paste is ready.
  2. Boil 2.5 cups of milk , add sugar to it.
  3. Add the custard paste to the milk and cook stirring continuously until it becomes thick.
  4. After it comes to room temperature, refrigerate it. It will become more thick when cooled.
How to make bread pudding :
  1. Take the bread slices and remove their sides carefully with the help of a knife and keep aside.
  2. Take a 6" baking tray, preferably glass ware.
  3. Take 4 slices of bread and place them evenly on the tray.
  4. Now divide the custard equally into three parts in separate bowls.
  5. Pour the first bowl of custard on the bread slices such that it covers the bread from all sides.
  6. Now sprinkle the chopped cashew nuts, almonds and tooti fruity on top.
  7. Again place 4 bread slices over it and repeat the same procedure as done before.
  8. Similarly make three layers of bread and custard and finally garnish it on top.
  9. Refrigerate the dish for 30mins so that the bread soaks the custard and turn soggy.
  10. Serve chilled !!!
