Stove Top Paneer Steaks

by Shaheen Ali

There are two main seasons when you can enjoy hot snacks and appetizers along with the climate…. Monsoon and Winters. There are couple of months left for the winters to arrive but Monsoon has certainly arrived at our door step and giving enough opportunities to us to enjoy savories and mouth watering appetizers. One such all time favorite monsoon appetizer at my home is Grilled Paneer Skewers or Steaks. I have a potable BBQ at home, but sometimes just find myself too lazy to get that working. But nothing worries me till i find any substitute for that, and here in this case the substitute for my BBQ is my very humble stove top. Yes, you heard me right, today i shall be sharing the recipe of Paneer Steaks made on stove top.

So when it comes to grilling, it has to be a grill pan. The grill pan is something i love to use in my kitchen for some of my particular recipes like chicken and fish. The pattern that prints on the body of the food is not just beautiful but also invites and makes the food very appealing. So here in this recipe i did not use any onion or tomato. Its a much more healthier version than what i regularly make. It has vegetables like broccoli, red and yellow bell peppers and paneer of course. I substituted mustard oil with olive oil to make it more healthier. Let’s check out the recipe …

Instructions
  1. Cut paneer and washed veggies into given sizes and keep aside.
  2. Heat 2 cups of water in a pan and add cut vegetables in it with a pinch of salt. Blanch the veggies till 80% soft. Drain water and collect the vegetables in a bowl and keep aside to cool.
  3. In a large mixing bowl, add yogurt and whisk till smooth.
  4. Now add salt and rest other ingredients mentioned under Marination.
  5. Mix well and add paneer pieces and vegetables in it and mix nicely such that everything incorporates well.
  6. Cling wrap the bowl and refrigerate for minimum 1 hour.
  7. After an hour, take out the marinated paneer and vegetables from the fridge and prepare to grill.
  8. Take bamboo skewers an and start piercing in the vegetables in a patter like : red bell pepper + yellow pepper + broccoli + paneer and then again repeat the same.
  9. Prepare all the skewers and keep aside in a tray.
  10. Heat grill pan on the stove top, you can also use any plain non stick pan also. Grill pan gives patters to paneer cube hence i used that.
  11. Spray or brush some olive oil and heat.
  12. Once the pan is hot, place the skewers and keep basting oil from sides so that the vegetables get grilled nicely.
  13. Keep turning the skewer in regular intervals such that the paneer and veggies get grilled from all sides.
  14. Place the steaks on the serving plate and serve hot with any of your favorite dip or ketchup.
