Stove Top Grilled Smoked Tandoori Chicken

My son is a vegetarian from birth but my husband keeps trying to make him eat some non veg in any form. After 5-6 years of struggle, one day both me and my husband noticed that my son loves to eat the charred chicken that tastes crisp and delicious. So we identified that if we serve him something that is flavorful or what we call in Hindi as ‘Chatpata’ and which is not that fleshy but crisp then he enjoys it. So we took him to barbecue nation and asked him to try some tandoori chicken tikka….and to our surprise , my boy finished them all in no time. That was a real ice breaking moment for all of us. Ever since he had the barbecued chicken, he is now a big fan of tandoori and keeps asking me to make the same at home. Also to mention, he makes sure he is being served the exact flavor and texture, so we now often set up the barbecue in our lawn and enjoy our BBQ parties.

But WAIT!!!! What if you don’t have a BBQ set up at home? No worries at all, super mom has a solution for everything here.  Try making this stove top grilled and smoked tandoori chicken and surprise your loved ones with your cooking techniques and skills.


As i always say, winters come as heaven for foodies and when you have a great appetite, good food is no less than a blessing for you. A cold winter evening calls out for some amazing barbecue sessions. But wait, are you still worrying about how to get a chicken barbecued at home when you don’t have a set up! Well like i said before, if you don’t have a barbecue there’s nothing to worry at all, because this recipe will certainly give any best BBQ outlet of your city a run for their money. Chicken thigh, marinated and grilled on stove top gives an amazingly rustic aroma and flavor when we apply a simple technique and smoke the dish to get the authentic charcoal effect. Best goes with some Indian Pulao and a flavored yogurt dip as accompaniment.

Stove Top Grilled Smoked Tandoori Chicken Recipe
A perfect winter meal to keep your spirits high and body warm. Stove stop Grilled Tandoori Chicken has some amazing smokey aroma to enhance the rustic flavor and goes best with some Indian Pulao and Yogurt Dip.

Instructions
  1. Clean, wash and make 1 inch slits on Chicken thighs on both sides and keep aside.
  2. Mix all the ingredients mentioned in 'marination' in a large bowl to make a smooth paste.
  3. Add chicken thighs in it and rub the marinade nicely all over the pieces. Cling wrap the bowl and refrigerate it for minimum 3-4 hours. ( Over night marination gives much more amazing results)
  4. Heat some Mustard oil in a grilling pan and place the marinated chicken thighs and allow then to cook till they get charred.
  5. Carefully flip the chicken and cook from another side as well.
  6. Brush some butter in top while the chicken is grilling.
  7. Ones the chicken is soft, juicy, charred and nicely cooked, transfer it in a broad, wide base bowl.
  8. Place the chicken on the sides of the bowl and a small steel bowl covered with aluminium foil in the center.
  9. Take a piece of charcoal and hold it on fire with the help of a tong.
  10. As soon as the charcoal starts burning place it in the small bowl.
  11. Take 1 tbsp of ghee and pour on the burning charcoal immediately and close the lid such that all the smoke remain inside the bowl.
  12. Keep the lid closed and open only when you are ready to serve.
Recipe Notes

Charcoal gives an amazing rustic and smokey flavor to the chicken that comes from any Charcoal barbecue.

Make sure the lid of the bowl is nicely fixed so that the smoke gets infused properly.

Serve the dish hot with some Indian rice and flavored yogurt dip.
