Spinach & Cheese Gujiya

Gujiya happens to be our very Indian desi sweet that is typically made during festivals like Holi and Deepawali. Most of us have made or tasted the sweet gujiya with a delicious filling of coconut, mawa, nuts etc. But today i bring you a very appetizing fusion recipe of gujiya that is not sweet. Yes, its savory snack made with spinach and cheese and shaped into a gujiya. This snack is ideal for children who hate to eat greens in any form. The cheese makes this spinach filled gujiya absolutely irresistible. I shaped it with hands but you can also use molds to get those perfect store bought shape. Serve it hot with sauce or any of your favorite dip. This snack also makes an ideal serving option for your kitty parties or brunch parties and also a great tiffing option for kids.

Note : These Gujiyas can also be baked or airfried.

Instructions
  1. In a large mixing bowl, add flour with salt, ghee/oil and dry mix well.
  2. Now gradually start adding water and knead to make a soft and supple dough.
  3. Cover the dough with a muslin cloth and keep aside till you prepare the filling.
  4. Blanch the spinach leafs and drain water nicely.
  5. Collect the spinach and finely chop it.
  6. Now add salt, green chili paste, finely chopped/minced garlic and mix well with a spoon.
  7. Add lot of grated cheese into the spinach mix and keep aside.
  8. Now to make gujiyas, first heat oil in wok. Meanwhile clear the counter and dust it well with some plain flour.
  9. Pinch a small lemon size dough and roll it to make a small ball.
  10. Flatten the dough ball on the counter and roll out to make a round puri.
  11. Take spoonful of filling and place it in the center of the puri.
  12. Fold one side of the puri and bring it to the other corner such that it makes a crescent.
  13. Seal the sides with well and make impressions with a fork. You can also use ready made gujiya making molds.
  14. Once the oil is nicely hot, slide in the gujiyas 1-2 at a time and fry from both sides till golden in color.
  15. Transfer them on a kitchen towel to absorb excess oil.
  16. Serve hot with your favorite dip.
