No Onion – No Garlic Roasted Mushroom

The most exotic dish after Paneer for the vegetarians is suppose to be the one and only Mushrooms. This humble fleshy and edible fruit bodies is used to make various delicious preparations which is loved by kids as well. Mushrooms are actually a fungi which bear fruiting structures that are large enough to be seen with the naked eye. Whether its a soup or a curry, mushroom has it’s unique texture that blends with almost everything leaving an exotic flavor. One such amazingly delicious side dish made with mushrooms is Roasted Mushroom with onion and garlic. Medium sized mushroom, cut into pieces and mixed with various spices like rosemary and Italian spices is teemed up with baby tomatoes and roasted to get a deep brown color and a smoky flavor. It can be enjoyed as a dish dish with your meal or just have it as a snack with a dash of lemon juice over it.

  1. Wash mushroom nicely and spread them on a kitchen towel to dry.
  2. Cut mushrooms into four quarters, if they are too small then keep them whole.
  3. In a large mixing bowl, add mushroom pieces along with cherry tomatoes, dry rosemary herb, Italian spice mix, some salt as per taste and crushed black pepper.
  4. Toss them well such that everything mixes well.
  5. Pre Heat the oven at 220 degree C for 10 mins.
  6. Line a baking tray with parchment paper and spread the mushroom mix all over leaving some space between. Do not over crowd the tray as the pieces need some space to roast.
  7. Place the tray into the oven and roast for 10-15 mins or till the mushroom starts turning deep brown in color. You can increase the time if you wish to have a blackish color.
  8. Take out the tray and allow it to rest for few mins.
  9. Now add finely chopped cilantro or coriander and mix well.
  10. Enjoy the roasted mushrooms as a side dish with your meal or just a snack with a dash of lemon juice on it.
