Notes :
1. The best option for making Bhapa Doi is Greek Yogurt. But if in case you don’t have it, just use hung curd. For making hung curd, take 2 cups of regular curd in a muslin cloth and hand it to a tap etc to strain water. Leave the hung curd for 1-2 hrs to strain properly. This way you will get thick curd which is ideal for making Bhapa Doi.
2. Always use full cream milk in the recipe.
3. The amount of condensed milk used can be regulated as per the sweetness required.
4. Whisk the ingredients well, there should not be any lumps left.
5. There are two basic methods of making Bhapa Doi, if you don’t have an oven, then you can steam it like a dhokla or idli in a steamer.
6. Bhapa Doi can be flavored with various fruits like starwberry, berries, pomegranate or mango etc.
7. You can garnish the dessert with various chopped nuts or fruits or even top it with saffron.
