Rajasthani Khooba Roti

Indian breads have a huge variety to display, with every 100 kms the flour, texture and taste of the flat breads change. India is the largest cultivator of wheat and many other gluten free grains. Each and every grain is ideally used to make variety of flat breads which belongs to different regions and there respective cuisines. One such amazing flat bread is Khooba Roti that comes from Rajasthani Cuisine. Khooba Roti is whole wheat flat bread,  patterned by making small impressions all around the roti and later ghee roasted and serve with any veg or non veg curry.

  1. In a large mixing bowl, add flour, salt, crushed cumin and ghee. Mix together with your hand to form crumbs.
  2. Now gradually add warm water and knead the flour to make a soft and pliable dough.
  3. Cover the dough with a muslin cloth and allow it to rest for 10 mins.
  4. Heat a flat iron tawa/skillet and meanwhile start making the roti.
  5. Pinch a large lemon sized ball from the dough and roll it to make a ball.
  6. Dust the counter well and roll out the dough ball to make a thick round roti.
  7. Place the thick roti on the tawa and dry roast from bottom side.
  8. While the roti is roasting from bottom, start pinching the top and make impressions. You can make impressions in any pattern you want.
  9. Flip the roti and again roast from the patterned side.
  10. Once both sides are lightly browned hold the roti with a tong, remove it from tawa and place it directly on flames.
  11. Flip and roast from both sides till it's evenly cooked from all sides , place it on a plate and brush the patterned side with ghee.
  12. Serve hot with your favorite curry !
