Palak Paneer

by Shaheen Ali

My friend Anisa Arif is a great human being. Her hard work and dedication towards her work is remarkable and commendable. The proud owner of Zaiqa – The spice store , does wonders with her hands. Her spices are simply outstanding and far better than what we usually purchase from shops. Recently Anisa asked me to try her Zaiqa Palak Paneer Spice Mix and as a blogger what better gift i could have asked for. Anisa, being the most kind and generous person sent me various other spice mixes too…which i shall be reviewing in my upcoming posts. Before this i had tried Zaiqa’s non veg spices but this was my very first experience with veg spice mixes.

The one best thing i love about Zaiqa spices is that the moment i open the packet, there is an enticing aroma that spreads all around and make one feel simply exotic. I guess this is the magic i was mentioning above. So now as i have used almost many of the Zaiqa spices, i strongly recommend each and everyone to pick up your phone or laptop and quickly order Zaiqa spices and take your cooking experience to another level. Here is address to order http://shop.zaiqathespicestore.com/

Palak Paneer, one of the most awaited winter recipe when colaborates with Zaiqa, it reaches to a 7 star level. • 2 chilies Green
  • Salt - as needed

Instructions
  1. Pluck and wash leaves of spinach. Heat water in large bowl and blanch the spinach. As soon as the spinach starts boiling up simmer the gas and add 1/2 cup of milk. This will give a mild sweet flavor to the curry.
  2. Pass the spinach through a strainer and allow it to cool.
  3. Once the spinach is cool, grind it to a fine paste.
  4. Heat oil in a wok and lightly fry the paneer cubes and keep aside. Now in the same oil add minced ginger and garlic and fry till golden in color.
  5. Now add chopped onions and saute till translucent and pink in color.
  6. Add chopped tomatoes and fry all together till the tomatoes go soggy.
  7. Now add zaiqa spice mix and fry all again for another few minutes till the oil starts leaving from sides.
  8. Pour in the spinach puree and mix all together nicely. Add water if required. This will increase the volume of the curry.
  9. Adjust salt and allow the curry to come to a boil and then simmer the gas and let it cook for few minutes. Keep the lid closed.
  10. Once the spinach curry is done, turn off the gas and add fried paneer cubes.
  11. Serve hot with Naan or Tandoori Roti.
