No Fry Dahi Bhalla Chaat

My Chaat cravings finally came to rest in peace only when i had a plate of Dahi Bhalla Chaat. Usually i avoid Dahi vadas or Dahi Bhallas these days just because they are deep fried and just not good for health. But this doesn’t mean one cannot have it. Well yes, if you have a Panniyaram pan or Appe pan then you are sorted. Ever since i got this magical pan in my kitchen, my oil comsumption is cut to half and sometimes even zero. After having tried hell lot of this in Appe pan, today i tried making some awesome urad dal bhalla which i could dunk in fresh curd and make a chaat out of it. My God, my mouth is watering again …lol


The process of making the batter will be the same as we make for the regular dahi vada or dahi bhalla. The only major difference is that here we won’t deep fry the bhalle instead just brush it with oil and roast in our very magical Panniyaram pan.

Okay for those who don’t know, lemme tell that Dahi vadas are those big sized vada and the small little tiny balls dunked in creamy curd is called Dahi Bhalla. So now that you are clear with the doubts, let us quickly proceed to check out the ingredients required, direction to make the chaat and also some cool serving suggestions.

Instructions
Direction & Method :
  1. Wash and soak urad dal overnight or minimum 3 hours.
  2. Drain water and grind dal along with cumin, green chili, chopped curry leaves and chopped ginger into a thick batter. If you find dal to be too thick, add little water to make it grind easily.
  3. Transfer the batter into a large bowl and salt as needed. Use a ladle to mix it nicely. I prefer using my hands so it's your personal choice.
  4. Allow the batter to rest for an hour. After an hour you will see the batter rising a little. If you are patient enough then you can allow the batter to rest overnight. By doing so the batter will rise well and you will get nice and fluffy bhalla with beautiful air pockets.
  5. Heat a panniyaram pan or appe pan (whatever you say) and add few drops of oil in each section of the pan. The pan should be piping hot.
  6. Take an ice cream scooper and scoop some batter and release it into each section of the pan. By doing this you wil get perfect round balls. But don't get bothered if you don't have the scooper. Just wet your hands a bit and scoop out the batter and drop it into the pan.
  7. Close the lid, simmer the gas flames and let the bhalle cook.
  8. After few minutes , flip the balls and fry from the other side. This time just wet the silicone brush with oil and brush it on the balls.
  9. Close the lid again and fry golden from both sides.
  10. Transfer them on a kitchen towel and let them cool completely.
For making Chaat :
  1. Heat water in a wide base pan and add a pinch of salt in it while heating.
  2. Once the water is hot, drop 6-7 bhallas or as much as you want as per the size and width of the pan.
  3. Allow them to rest for few minutes till they get soft. Take them out one by one carefully and squeeze excess water very gently. Make sure the bhalle shouldn't break.
  4. Place them all in the serving tray or bowl side by side to each other.
  5. Meanwhile whisk curd to make it creamy and lump free. Add salt into it as per taste.
  6. Pour in the whisked curd generously all over the bhallas.
  7. Add spoonful of green chutney and tamarind chutney all over the dahi bhalla.
  8. Enjoy your NO FRY DAHI BHALLA CHAAT with your friends and family!

Serving Suggestions :

If you are planning to make this No Fry Dahi Bhalla Chaat for your family get together, Tambola party, Kity Party or your kids Birth Day Party then to make it look more interesting i have few suggestions to share... hope u like it.

1. Take a side table and arrange it like a Chaat corner with small little fancy banners displaying the name of the dish. 

2. Keep the ingredients used for making chaat handy, so that one can see what all are used to make the chat.

3. Allow your guests to make the chaat themselves so that they can make it as per their choice.

4. It would be even better if you appoint someone from your family to host the chaat corner where he/she can make fresh chaat infront of the gusts and serve them with a smile. 

By doing this i am pretty sure your chaat party is going to be a super hit and many people will envy your creativity skills....hahaha!
