  1. In a bowl soak cashews with milk and keep aside for 40 mins.
  2. Transfer the soaked cashews and milk in a grinder jar and grind to make a smooth paste. Collect and keep aside.
  3. In a microwave safe bowl, add sugar and water and mix with a spoon. Microwave it at high for 10-12 mins or till the sugar dissolves.
  4. In another microwave safe small bowl melt ghee at high for 30 secs.
  5. Add ghee and cashew paste in sugar syrup along with few strands of saffron and cardamom powder. Mix well and microwave it at high for 12 mins. Keep stirring at regular intervals (twice or thrice).
  6. Put a drop of cashew mix in cold water and wait for 2-3 secs. Take out the drop, if it forms into a soft ball, the mix is ready to set. If not then microwave it for another 2-3 mins.
  7. Line a tray with parchment paper or grease it well with ghee and pour in the cashew mix immediately.
  8. Tap the tray so that the mix spreads evenly without forming bubbles.
  9. Sprinkle saffron strands generously all over the spread. You can also garnish with silver leaf. Set aside to cool.
  10. Cut into desired shapes and store in an air tight jar/ box.
