All my readers must be wondering why is my blog loaded with so many egg recipes. Well yes, this year i have started up a series of recipe where i shall be using eggs as it is a rich source in protein. Now what happened suddenly, why protein? So the reason is my son is a bit underweight and i have been suggested by the doctors to feed him with protein rich diet, this is the prime reason why i have suddenly added a lot of eggs in our regular diet. It’s healthy, nutritious and to add a little texture i used some amazing store bought Oat crackers which my mom got me from her recent trip to Mumbai, so won’t be sharing the recipe of that.
Easy salad recipes start with some shredded lettuce and egg salad which is teemed up with some lemon and olive dressing accompanied with some oat crackers. The lettuce adds color, texture and crunch to my salad where as eggs contribute as a flavoring ingredient. Serve it with some amazing mint and mayo dip for the crackers and some milk if your kid id enjoying it. Have a bowl of this and you are sorted for the entire day!

- 1 bunch lettuce shredded
- 4 Eggs hard boiled
- salt as needed
- 1 tsp Black Pepper Powder
- 1/2 tsp Ginger powder optional
- 1/2 tsp olive oil
- 1 tbsp lemon juice
- 1 cup Oat crackers i used store bought crackers

- In a bowl add, lemon juice, olive oil, a pinch of black pepper and ginger powder and mix well to make a dressing.
- Add shredded lettuce to the dressing and mix well.
- Season with some salt if needed and keep aside.
- Hard boil the eggs and peel them once they are cool.
- Cut the eggs in quadrants length wise and add to the lettuce salad.
- Add some oat crackers to the salad, give a quick toss and serve along with some toasted bread and milk.
