Time to give a cheer to good health! When the world is turning vegan, my take on veganism will be a little small to start with. Though i have worked with Tofu etc vegan ingredients but never tried some beverage. For those who are new to vegan concept let me brief you all a bit. In simple words, anything/ any non dairy product is categorized under Vegan. Normally we all use dairy milk like cow or buffalo milk hence to substitute that with vegan we will have to use either soy milk, almond milk, coconut milk etc. Not all vegetarian ingredients are vegan. But all vegan ingredients are vegetarian for sure. To start with my veganism i opted to go with something simple yet delicious and nutritious. Kesar Badam Doodh aka Vegan Saffron Almond Milk, vegan because the milk used is of Almond. It’s full of nutrients and is a great energy booster as well. The milk is best enjoyed hot but can be served chilled as well. A simple recipe that can make your family or your guests feel special and definitely royal. If you don’t want to make it vegan you can any day opt for cow milk etc.

- 3 cups Almond Milk
- 1 tsp saffron
- 1/2 cup Almonds blanched
- 2 tbsp sugar
Ingredients

- Blanch almonds, remove skin and grind to make a fine paste.
- Keep few strands of saffron aside for garnish and soak the rest in 2 tbsp milk for minimum 30 mins. To get deep yellow color, keep the soaked saffron in fridge.
- Boil 3 cups of milk in a pan and reduced it till 2 cups remaining.
- Add sugar and stir till sugar dissolves. Now add almond paste as needed and mix well.
- Once the milk is creamy and luscious , add soaked saffron and give a quick boil again.
- Turn off the gas and garnish with few more saffron strands.
- Serve hot or chill in refrigerator before serving.
