Kashmiri Rogan Josh

Kashmiri Rogan Josh is a delicious flavorful Lamb curry that comes from Persian origin. It is the signature dish of Kashmir, where the name is derived from Persian words in which Rogan meals oil and Josh mean Intense heat. Kashmiri Rogan Josh is an integral part of the lavish spread Waawan. No celebrations are complete without this signature dish, typically made with lamb but now days even mutton is used to make this authentic and aromatic Rogan Josh. Among few exotic ingredients used in the recipe, Alkanet root, better known as Ratan Jot is the most important one. It is traditionally used to add color to Indian food. It is the original natural food coloring that gives the famous Kashmiri dish Rogan Josh its signature red color. You can get it in any near by store or you may also purchase it online.


So if you are making Rogan Josh, make sure you have all the ingredients ready, because few recipes just don’t allow short cuts. I had been making this dish through years but never got a chance to update it on my blog. Finally the most awaited recipe of Kashmiri Rogan Josh is here and i just, couldn’t stop myself posting it here. The recipe i am sharing here is adapted from Cubes N Juliennes . So let us quickly check out the recipe of this Kashmiri delicacy.

  • 500 gms Mutton (with bones, cut into medium pieces)
  • 1 cup Yogurt

Instructions
  1. Wash mutton nicely and drain water completely.
  2. Marinade the mutton with mentioned ingredients under Marination for approx 1-1.5 hrs. Cling wrap the bowl and refrigerate it for better results.
  3. Heat oil in a heavy bottomed wok and add bay leaf and other whole spices mentioned.
  4. Immediately add marinaded mutton and mix well. Fry on medium to high flames stirring occasionally.
  5. Now add asafoetida and stir well.
  6. Add almost 1 cup of water in the mutton mix and allow it to cook with lid closed.
  7. In a separate bowl, add yogurt and red chili powder & fennel powder and whisk nicely.
  8. Take off the lid and add whisked yogurt and mix well such that everything incorporates nicely.
  9. Adjust salt as needed
  10. Now add Ratan Jot / root infused in oil in the mutton and cook till mutton is soft and tender.
  11. Garnish with fresh coriander and serve hot.
