Stir Fried Kundru

Ivy Gourd also known as Kundru , tendli, tindara etc in India. Tender green kundru sliced and stir fried goes well with chapati or paratha. Can also be used as a side dish for any vegetarian meal. Kundru stir fry is another great tiffin option.. easy and can be made in a jiffy is a great dabba food.


While buying kundru one has to be very particular in choosing the raw ones. Usually kundru comes in same shape and size but it’s always better to avoid picking the fat ones. It’s likely to be ripe and red in color from inside. For making stir fry you have to get smaller and tender one probably green in color from both inside and outside. Kundru is summer vegetable and is found at almost all parts of the country, hence the recipe of a simple stir fry also differs from region to region.

In my place i like to stir fry kundru in minimum oil with a ligh tempering of mustard seeds, curry leaves and dry red chili. I also prefer adding some crushed peanuts and little roasted sesame. The peanuts and sesame not just engance the flavor of the dish but also gives volume to the vegetable along with an exotic aroma. Instructions
  1. Wash and thinly slice kundru and keep aside.
  2. Heat oil in a wok and add mustard seeds , curry leaves and dry red chili and let them crackle.
  3. Add the sliced kundru and stir well in high flame for 2-3 mins.
  4. Now add turmeric podwer and salt and let the kundru fry in low flame.
  5. Once it starts getting tender, add coarsely grounded peanuts, red chili podwer and coriander powder and give a nice stir.
  6. Let everything fry for few more minutes with lid closed.
  7. Once the kundru is done, add roasted sesame all over and give a quick mix.
  8. Serve hot with chapati or parathas for tiffin or as a side dish with your everyday meal.
