Instant Jalebi in Desi Ghee

Did u know that our very famous, sweet and crispy Jalebi is also known as Zulbia, and is very popular in countries of South Asia, West Asia and also North Africa. It is made by deep-frying a wheat flour batter in pretzel or circular shapes, which are then soaked in sugar. Indian jalebi is made with Maida (all purpose flour) with a mix of curd mainly. The batter is kept for fermentation and then later fried in circular shape and soaked in sugar syrup. Quite a lengthy process!


Jalebi is one of my family’s favorite sweet. Typically desi and the most popular selling mithai on Indian streets and stalls. Early morning a plate of Poha with some crispy jalebi in breakfast is sheer bliss! In earlier times, jalebis was served in all special occasions and also marriages. Even today, you can find various stalls in marriages and parties making jalebis and serving with thick and creamy Rabri. Recently i came across a video of Chef Pankaj Bhadouria where she taught how to make instant jalebi. Isn’t that cool! Well, yes, the recipe required handful of ingredients and was super quick to make. Now i can anytime make jalebis at home and surprise my guests too. For Syrup :
  1. In a pan heat water and when it comes to a boil, add sugar and cook till sugar melts.
  2. Simmer the gas flames and let the water reduce till you get string syrup.
  3. To check touch the syrup with your index finger tip and join in the thumb. While pulling apart you will see thin string forming between the finger tip and thumb tip. The syrup is ready. Turn off the gas and set aside.
For Jalebi :
  1. In a large mixing bowl, add flour, curd and of water and whisk to make a smooth batter.
  2. Now add baking powder, cardamom powder and food color. Whisk again nicely till everything incorporates well and the batter is smooth and flowing.
  3. Pour the batter in the piping cut the edge to make almost 4mm opening.
  4. Take a wide base pan and heat ghee/dalda in it. Once the ghee is piping hot, reduce the flames.
  5. Hold the piping firmly and carefully start making circular patterns on the hot ghee. Make 4-5 jalebis in batchs.
  6. You will see bubbles appearing. Fry till bubbles reduces.
  7. Use a tong and flip the jalebi & fry from both sides. This may take hardly 2-3 mins.
  8. Using the tong, take out the jalebis one by one and dip them in the sugar syrup and let them soak for 30 secs.
  9. Take out the sweet & crispy jalebis from the syrup bowl and serve hot!
