Hello everyone! Yesterday i had two medium size raw papayas in hand and was wondering if i could get any interesting recipes to consume those. The moment i posted a query asking for raw papaya recipe on my Instagram, i started receiving hundreds of messages. Thank you so much for sending me so many recipe options with Raw papaya. I got around 42 recipe suggestions out of which I picked two that spontaneously made me get up and rush to the kitchen and try my hands on.
The first recipe I picked was Raw Papaya Colorful Candied Cubes aka our very popular TUTTI FRUTTI. This recipe came to me from my partner in crime, soul sissy, Farrukh Ansari. You can also follow her on Instagram @cubesnjuliennes . The moment she briefed me I just couldn’t resist making these cutie colorful cubes.

Till then here’s a the scripted version for you all.
To make colorful Tutti Frutti peel and cut raw papaya into small cubes. Wash them nicely and keep aside. Heat 4 cups of water in a pan and add papaya cubes in it. Boil for 6-7 mins till papaya turns translucent. Strain and collect the semi cooked papaya cubes in a bowl and keep aside. In a flat bottomed pan add 2 cups of sugar and 3 cups of water and let it come to a boil till sugar melts.Now add the semi cooked papaya cubes and cook for 20 minutes till you get i string syrup. Turn off the gas flames and add vanilla extract and give a quick stir. Take three medium size bowls and divide the papaya mix equally along with the syrup. I made three portions because i had three colors. If you have more colors you can divide them accordingly. Take good quality food colors and add 1-2 drop each into the bowls. Now you have three different colored cubes. Let the colorful candied cubes rest for 12 hours so that the color gets absorbed well. Now discard the sugar syrup and collect the cubes in a kitchen napkin and gently press to absorb excess moisture. Take a wire mesh and spread the cubes all over and let them dry for another 2-3 hours. Once the fruit is dry it wont stick to each other. Collect them in a dry air tight jar and store in fridge for further use.
