……Milagai Podi aka Idli Podi is a traditional Gunpowder recipe that is actually a dry condiment which is typically enjoyed with Idli or Dosa with a dollop of Ghee, Sesame Oil or Coconut oil depending on one’s personal choice. They say when you visit South India, specially Andhra Pradesh and Telangana, this Idli with Podi is a staple breakfast that is made in homes as well as street side stalls with a hot cup of coffee.  Very few basic ingredients are sauteed and ground to make a coarse powder is Podi. Podi can be made with various other flavoring ingredients, but this Milagai podi is the basic recipe that is commonly served in daily basis.

For making podi take a heavy bottomed pan add sesame seeds and dry roast till they turn golden brown. keep aside. Now add 2 tsp oil and fry dried red chilli till they crackle. Add few curry leaves and continue to sauté till they turn crisp. Turn off the gas and keep aside to cool. Again add a tsp more oil and saute chana dal and urad dal till they turn golden brown. Now transfer everything along with some salt and turmeric to a blender and blend to coarse powder.
For making idli podi :  Grease a pan or tawa with 1-2 tsp of ghee. When the ghee melts, coat the idlis and warm them from both sides. Add prepare podi or gunpowder and toss the idlis till they are well coated with the podi mix. Serve warm.

Instructions
  1. Heat a pan and dry roast sesame till golden, transfer into a plate and keep aside.
  2. Heat 1 tsp oil in the same pan and add asafoetida, dry red chilies and curry leaves and wait till they splutter. Turn off the gas, transfer into a bowl/ plate and keep aside.
  3. Again heat the pan with 1 tsp oil and add chana dal and urad dal. Saute till golden and keep aside to cool.
  4. Collect all the sauteed ingredients with turmeric and salt together in a blender jar and grind to make a coarse powder.
  5. Store the podi in an air tight jar and serve with oil before serving.
Recipe Notes
