……Milagai Podi aka Idli Podi is a traditional Gunpowder recipe that is actually a dry condiment which is typically enjoyed with Idli or Dosa with a dollop of Ghee, Sesame Oil or Coconut oil depending on one’s personal choice. They say when you visit South India, specially Andhra Pradesh and Telangana, this Idli with Podi is a staple breakfast that is made in homes as well as street side stalls with a hot cup of coffee. Very few basic ingredients are sauteed and ground to make a coarse powder is Podi. Podi can be made with various other flavoring ingredients, but this Milagai podi is the basic recipe that is commonly served in daily basis.

- 1/4 cup chana dal
- 1/2 cup urad dal
- 1/4 cup sesame
- 10-12 Kashmiri Dry Red Chili
- 3 tsp Sesame Oil or Vegetable Oil
- 1/2 tsp Turmeric Powder
- 1/2 tsp asafoetida
- 2-3 sprig curry leaves
- 1-2 tsp ghee melted
- salt to taste

- Heat a pan and dry roast sesame till golden, transfer into a plate and keep aside.
- Heat 1 tsp oil in the same pan and add asafoetida, dry red chilies and curry leaves and wait till they splutter. Turn off the gas, transfer into a bowl/ plate and keep aside.
- Again heat the pan with 1 tsp oil and add chana dal and urad dal. Saute till golden and keep aside to cool.
- Collect all the sauteed ingredients with turmeric and salt together in a blender jar and grind to make a coarse powder.
- Store the podi in an air tight jar and serve with oil before serving.
Serving Suggestions : Grease a pan or tawa with 1-2 tsp of ghee. When the ghee melts, coat the idlis and warm them from both sides. Add prepare podi or gunpowder and toss the idlis till they are well coated with the podi mix. Serve warm.
