Hunan style of cooking is a popular Chinese-American method where a dish is made with tender pieces of chicken cooked with vegetables and tossed in a thick savory and spicy sauce. Hunan style sweet and sour chicken is one such delectable recipe in which chicken pieces are cooked with pineapple and pepper in a thick sauce made with cornstarch and gives an amazing sweet and sour flavor to the chicken. Served as a snack or can even be enjoyed with rice as a side dish.
In continuation of my Christmas recipe series, today i bring you this absolutely delicious chicken snack that has both fruity and spicy flavors. The use of pepper make the chicken spicy and gives you the perfect kick to your palate where as the use of pineapple and it’s juice moderates the spiciness and gives an amazingly sweet yet tangy flavor. The Hunan style chicken can be served as a snack or appetizer and can even be served with rice typically layered on a bed of rice and enjoyed with chop sticks.
An ideal recipe for your brunch parties and also a great starter or a side dish for your Christmas or New Year celebrations.

- 2 chicken breast cut into 1 inch pieces
- 2 tbsp Olive Oil / Sesame Oil
- salt as needed
- 1 tsp black pepper freshly crushed
- 1/2 cup red bell pepper diced
- 1/2 cup Yellow Bell Pepper diced
- 2 tbsp corn starch
- 3-4 tbsp water
- 3/4 cup Pineapple Chunks fresh or canned
- 1/4 cup Pineapple Juice fresh or canned
- 2 tbsp brown sugar
- 3 tbsp vinegar
- 1/4 cup chicken stock
- 1 tsp sesame seeds for garnish
- 2 Lettuce Leaf for garnish

- Heat oil in a non stick skillet on medium heat.
- Season chicken pieces with salt and pepper and add to pan.
- Saute chicken till its brown in color and transfer to a plate.
- In the same pan add red and yellow bell peppers and saute for a minute.
- Add in the pineapple chunks, juice, sugar, vinegar and chicken stock and bring to a boil.
- Simmer the gas until sauce begins to reduce and goes thick.
- In a bowl add cornstarch and water and mix well.
- Add in cornstarch mixture, stir continuously and bring liquid to a simmer.
- Now add the chicken pieces and cook for another 5 minutes and trun off the heat.
- Line the serving tray/plate with lettuce leaf and place the chicken over it.
- Serve as a snack or layer over a bed of rice.
