The Bourbon biscuit sometimes referred to as a Bourbon cream is a sandwich style biscuit consisting of two thin rectangular dark chocolate–flavored biscuits with a chocolate buttercream filling. The biscuit was introduced in 1910 by the biscuit company Peek Freans, of Bermondsey, London, originator of the Garibaldi biscuit. The new name was taken from the European royal House of Bourbon. The Bourbon biscuit is the fifth most popular biscuit in the UK to dunk into tea. In India , Britannia makes original Bourbon Biscuits, though there are various other companies that make similar ones using different names.
Recently i came across one one of co-blogger Freda Sera Dias blog post of Home made bourbon biscuits, not just her pictures on the blog, but the recipe also fascinated me to try hands over it. As my son is a big time Bourbon lover and loves to take this biscuits for his break time in school almost daily, i just couldn’t skip making this. Freda has beautifully described the recipe in her blog and i followed her to the T. As i had never made this before hence, i kept myself restricted to what Freda did. Her recipe was easy to follow and had no scope for getting wrong. For making Home made Bourbon Biscuit all you need is All purpose flour, fine sugar, cocoa powder, baking soda, some butter, pinch of salt and some milk to knead. The dough is then wrapped in cling foil and allowed to set in refrigerator for about half an hour. Later the dough is rolled out and shaped into equal sized rectangles and pierced with tooth pick to make those traditional impression. Baked till crisp, these biscuits are then filled with cocoa butter cream spread to make sandwich biscuits.
