Garlic & Parsley Pull Apart Rolls

Nothing can be more blissful than the aroma of a freshly baked bread. I always had a fear to bake my bread. Yeast was the most scary thing for for unless untill i read the article on YEAST by my very good friend and a talented blogger Anshu Wadhwa Pande. My friend Anshu has some amazing bread recipes on her blog, from the basics to the professional ones, you will find everything there. Her recipe is easy to follow and flawless that can never go wrong. Today i picked up her basic white bread recipe and followed the same. The only innovation i did was that instead of making a white sandwich bread, i stuffed some garlic and parsley spread to it and rolled out to make some pull apart bread. I know for a amateur bread baker like me, it was a huge step to directly jump upon the garlic rolls. But the basic recipe was so perfect that encouraged me to stretch my imaginations and do something beyond my limits.

Though Anshu had used a large ratio of ingredients so i cut it a little to make a small portion as i was trying it out for the first time. The garlic and parsley flavor just infuses beautifully inside the bread and makes it too appetizing. I am happy to have tried this and specially when i see a big smile on my son’s face, it’s worth all the hard work and efforts applied.   1. Take luke warm water in a bowl and add dry active yeast and sugar. Give a gently stir with a fork and keep aside for 10 mins for the yeast to activate. Within the time you will see bubbles appearing and by 10 mins the yeast will look frothy.
  2. Meanwhile sift APF and add salt and olive oil to it. Now add the activated yeast and knead for good 10 mins. The dough should be so well kneaded that it should bounce back when pressed in with your finger.
  3. Transfer the dough to a greased bowl and cover it with a cling wrap or a kitchen towel and allow it to sit for an hour till it double it's size.
  4. Meanwhile grease your bread baking pan with oil and dust with some flour and keep aside.
  5. While the dough is resting, let us make the garlic spread. Take butter and olive oil and whick it till you get a creamy texture. Now add minced garlic and chopped parsley to it. Stir and mix well and keep aside.
  6. After an hour when the dough is double the size, transfer it from the bowl to your kitchen table and deflate the dough by punching in and then knead it well for another 5-6 mins.
  7. Dust the kitchen table well and roll out the dough to make a large flat chapati or more like a pizza base.
  8. Take the garlic spread and with a spoon, spread it all over the rolled out dough.
  9. Start rolling it inwards such that the spread rolls withing the flat dough. It will now shape a log.
  10. Seal the sides of the rolled log inwards and cut the log into 12 equal rolls.
  11. Place the rolls in the baking pan, brush a little oil on top, sprinkle the left over garlic spread on top along with some oregano flakes as shown in the image below and allow it to rest again for 45 mins. Cover the pan with a kitchen towel and keep it undisturbed.
  12. Pre heat the oven at 180 degree C for 10 mins and bake the bread for 30-35 mins or till you see the surface getting golden in color. Mine is a slow oven so it took me 40 mins to bake the rolls.
  13. Pull apart the garlic and parsley bread rolls and enjoy with your tea or coffee!
