Fudgy Brownies With Chocolate Chunks – Celebrating 200th Post !!!

Time to celebrate my blog’s 200th post with some gooey fudgey brownies with chocolate chunks. What better way can it be to celebrate with something i love the most…. The journey by far has been the most amazing one, the blog has given me everything i could have ever desired for. Though Spoon Fork And Food was started almost a year and a half before just to keep my sanity in check, but slowly slowly it became one of the most important part of my life. My 100th post was also celebrated by making a cake, but the journey from 100 to 200 has been a learning one for me.


Well i had been looking for a perfect brownie recipe since quite a long time, unless untill i landed up into my co-blogger/ friend Ramya Menon’s blog @ http://www.warandcheese.com/chocolate-brownie-recipe-9933-dish

Her recipe for brownie was not just easy but also inspired me to make one immediately. Though she had used dark chocolate compound which i were not having, hence i made few changes and innovations in my brownie recipe using Morde’s Milk Chocolate compound.

Unlike chocolate cake, a brownie is much denser in texture and gooey from inside. I used minimum baking powder and settled with 2 eggs as i wanted the eggs to help brownie rise and give it a fudgey texture too. The milk compound gave an amazing color shade as well as a moist and silky texture somewhere in between, that can be easily seen through the pictures.

Instructions
  1. Grease a 9"inch baking tray and line it with parchment paper. Keep aside.
  2. Sieve all purpose flour, cocoa powder, baking powder and salt together.
  3. Combine sugar and butter and blend it till it becomes smooth and light.
  4. Add one egg at a time, blend it first and then add the other egg, Blend all together.
  5. Add vanilla extract and mix well.
  6. Now add the dry mix into the wet mix and combine all together using a silicone spatula. Don't over beat the batter, just fold it in one direction.
  7. Add chocolate chunks and mix again.
  8. Pre heat the oven at 200 degree C and pour the batter into the lined tray. Spread it evenly on all sides with a spatula.
  9. Bake the brownie for 25 mins or till the tooth pick comes out clean.
  10. Transfer it to a cooling rack and allow it to cool at room temperature. Use the edges of the parchment paper to lift brownies from the pan.
  11. Cut into squares and serve.
